New culinary leadership at Alys Beach


New culinary leadership will expand the coastal community’s food and beverage offerings
beginning with a menu refresh at Caliza Restaurant

Hugues Le Berre will serve as the town’s Director of Food and Beverage, while Drew Dzejak will assume the role Executive Chef. The pair’s first order of business is to unveil a new fall meAlys Beach readies to take its food and beverage programming to new heights with the appointment of fresh culinary at the town’s flagship dining establishment, Caliza Restaurant.

Prior to joining the Alys Beach team, Le Berre and Dzejak worked at Montage Palmetto Bluff alongside Jeremy Walton, who became Vice President of Operations at Alys Beach in 2015. Le Berre will oversee all existing food and beverage operations on property, as well as work closely with Walton to develop forthcoming dining concepts. Dzejak will be responsible for all food operations for the growing community including recipe and menu development and testing.

“We are excited to be part of such a talented team,” says Le Berre. “Alys Beach is home to so many unique venues that provide a warm social experience. We want to enhance that by creating new concepts and events where food, wine, spirit, and music will bring the community together.”

Caliza’s fall menu offers contemporary coastal cuisine. Created by Dzejak and his team, the menu centers on quality, seasonal ingredients sourced from regional purveyors that highlight the restaurant’s Gulf Coast locale.

  • Fall Root Vegetable Salad, Farro Piccolo, Alabama Goat Cheese, Apple Cider Vinaigrette
  • Chilled Murder Point Oysters, Rosemary, Green Peppercorn Mignonette

Caliza will be open for the remainder of the season through November 31. Dinner will be served Tuesday through
Saturday from 5:30 to 9 p.m. through October. Beginning November 1, dinner will run Thursday through Saturday
