The Westin St. Francis Names Xavier Camacho as Executive Sous Chef

XAVIER CAMACHO NAMED EXECUTIVE SOUS CHEF OF THE WESTIN ST FRANCIS

 

The culinary team at The Westin St. Francis has appointed Xavier Camacho as its new Executive Sous Chef, who brings his passion and talent for creating simple, fresh dishes with a strong focus on locally sourced ingredients. In his new role, Camacho will support the executive chef and chef de cuisine with culinary operations to ensure the cuisine in Caruso’s, The Oak Room Restaurant and banquets is prepared to the highest standards of The Westin St. Francis. He will also assist with staff training, food cost management and menu development, among other duties.

Camacho was born and raised in Pachuca, the capital and largest city of the Mexican state of Hidalgo. His love of global cuisine began at a young age when his father would take him to restaurants to introduce him to cultures and flavors from around the world. Over the course of his 20-year culinary career, Camacho worked his way up from running four school cafeterias in Mexico as a teenager to becoming a chef in well-established restaurants throughout Northern California.

After three years as Chef d’Cuisine for Balloons Above the Valley in Napa, Chef Camacho joined the prestigious Carneros Inn as Sous Chef in 2004. In 2007, he accepted the position as Private Dining and Pool Sous Chef at Meadowood Resort, a luxury property in Napa Valley. In 2008, he joined Westin Hotels & Resorts to open their first property in Napa. As Sous Chef for The Westin Verasa Napa Valley, he played a vital role in establishing standards for the hotel and its restaurants including La Toque, which soon regained the prestigious Michelin Star rating. In 2011, he joined the team at The Westin San Francisco Airport as Executive Sous Chef, bringing his wine country expertise to the 397-room hotel. Camacho joins The Westin St. Francis from the Hyatt Place San Jose-Downtown where he was Executive Chef.

Chef Camacho’s formal training includes Wine Country Food & Beverage Management at Napa Valley College, Food & Wine pairing at the Culinary Institute of America St. Helena, and Leadership Training with Starwood Hotels and Resorts Worldwide.
