Mercato Della Pescheria Inside the Venetian Las Vegas Installs a One-Of-A-Kind Josper Oven To Maximize Flavor

Italian seafood restaurant Mercato Della Pescheria located at the Venetian Las Vegas has installed a brand-new, $25,000 Josper oven that has been proclaimed as the centerpiece of their open-air kitchen. Only three of these grills exist in Las Vegas, making it a unique addition.

Mercato Della Pescheria was the first restaurant in Las Vegas to utilize the grill when first opening their doors in 2016, with a recent upgrading to the newest Josper HGA50 model.

The Josper oven is designed and manufactured in Barcelona Spain, where many Michelin star restaurants and local brasseries, bistros and steakhouses alike rely on the grill to provide their dishes with new and unique flavors.

“You can cook just about anything with this grill,” said Augusti Comabella, Josper Chef USA representative, when asked about the versatility of this unique kitchen staple. “We’ve seen clients cook anything from paella to fresh fish to steak to prawns, and even desserts including bread pudding and roasted red berries.”

The grill provides each dish with a unique flavor due to the way that it is insulated, and also due to the fact that it is completely charcoal based, using zero electricity. It can reach temperatures of up to 800 degrees, allowing for both flash cooking or slow roasting.

Manufacturers recommend using their specialty line of charcoal with this oven, that is made from the quebracho tree that originates in both Argentina and Paraguay. The density of the wood grants a long and meaningful burn, allowing for the infusion of distinct flavors. This is the charcoal that Mercato Della Pescheria will be using with the latest install.
