Sereno Hotels Appoints Riccardo Ravaglia as F&B Director of Le Sereno St. Barths

Sereno Hotels is pleased to announce the appointment of Riccardo Ravaglia to F&B Director of Le Sereno St. Barths. In this role, Ravaglia will oversee the food and beverage operations of Le Sereno’s culinary outlets including Restaurant Le Sereno. Ravaglia joins an all-star culinary team at Le Sereno which includes the reputable Chef Alex Simone, as they refresh the resort’s culinary offerings with new, inventive and delicious cuisine. In the spirit of this new team addition, Chef Simone will soon introduce a new menu at the Restaurant featuring a wide array of new dishes including a Truffle Strozzapreti pasta accompanied by an asparagus and parmesan emulsion, a fresh Mahi-Mahi Ceviche, and a new Lobster Fricasse using fresh Caribbean lobster tail and surrounded by carrots, morels and a pinot grigio emulsion. The chef’s beloved classics, such as the Linguini Lobster, the Risotto al Gambero Rosso and the Veal Milanese will remain on the menu.

“Today is an exciting new era for the restaurant,” said Samy Ghachem, managing director of Sereno Hotels. “I believe that we have some of the best cuisine on the island, the best views, the best location and amazing design, paired with a talented team both in the kitchen and in the front of the house. With the combined skill and command of Chef Simone and Riccardo’s longstanding experience working with the most notable Italian restaurants in New York, Le Sereno’s time to shine is now and we look forward to sharing new experiences with our guests.”

Ravaglia comes to Le Sereno with more than 20 years of management and hospitality experience. Born in the city of Ferrara, located in the Emilia-Romagna region of Italy, Ravaglia grew up around some of the country’s finest cuisine that instilled in him a passion for great food and good taste, leading him to a career filled with success in the culinary industry. In his free time, Ravaglia enjoys playing the guitar, occasionally composing his own music and listening to jazz or Italian “cantautori” while in the company of his loving wife and son, as well as traveling the world and meeting new people.
