New Executive Chef Scott Hines Launches Debut Menus for Hotel Revival

With a new season and executive chef comes new menus for Hotel Revival’s Topside, a rooftop restaurant and garden bar overlooking Baltimore’s cityscape, and Square Meal, a farm-inspired neighborhood market and restaurant serving breakfast and lunch. Executive Chef Scott Hines joined Hotel Revival in March with new recipes in mind and a fresh vision for the hotel’s food and beverage program.

“The new spring menu at Topside is inspired by local and seasonal ingredients that are fresh, light and flavorful while the new menus at Square Meal feature a wide array of selections, including vegan, vegetarian and gluten free options” said Chef Hines. “I am excited to be launching my journey and first menus at Hotel Revival.”

With years of experience under his apron, Chef Hines brings culinary expertise to the year-old hotel. The new dinner menu at Topside features a variety of small plates, including several fresh seafood options such as, Lobster Chowder ($10), Mussels ($15), Clams ($15), Oysters ($16), and the colorful, Crispy Octopus ($14), topped with chorizo, baby scallops and candy cane beets. Other small plates include Lamb Ribs ($14), Confit Duck Wings ($13), Chicken and Foie Gras Corndogs ($12) and the Grilled Piggy ($12), a brown sugar pork belly with fermented coconut, mango and pickled mustard seeds.

Entrees on the new menu include a Crab Cake ($32) accompanied by lemon potatoes, asparagus and avocado-celery slaw; Gemelli Pasta ($14/$24) with morrel mushrooms, English peas, rocotta salata and sorrel pesto; Rockfish ($29) dressed with wild mushrooms, ramp soubise, baby corn and brandade; and a 34oz. Tomahawk Steak ($95; feeds 2-3 people) with lemon potatoes and grilled asparagus. Menu items are available as vegan, vegetarian or gluten-free.

Square Meal, opened daily for breakfast and lunch, launched new menus in March. The new breakfast menu features local ingredients and vegan and vegetarian options. Square Meal’s new lunch menu presents two salad options, a soup of the day, and several sandwiches, including a Chicken Salad Sandwich ($13), Fried Catfish Sandwich ($13), Crab Cake Club ($18) and a Short Rib Pastrami ($14).

Topside opens at 4:00 p.m. Monday through Saturday. On Sundays, the restaurant serves brunch from 10:30 a.m. to 2:30 p.m. Square Meal is open for breakfast and lunch on Monday through Sunday starting at 7:00 a.m.
