Instructions
1In a large bowl combine first five ingredients.
2Drizzle extravaGONZO Roasted Garlic Oil, and lemon juice and toss to coat well.
3Season with salt and pepper to taste.
Tom’s Tip
As a holiday meal, be sure to use more red peppers than any other colors. It will look very “love-ly.”

•1 large bell pepper, diced
•1/2 cup cherry tomatoes, halved
•2 green onions, sliced
•2 tablespoons fresh minced parsley
•1 tbs extravaGONZO Roasted Garlic Oil
