Apple, ParmCrisps and Hazelnuts Endive Boats
½ cup vegan Parmesan shreds
½ cup crumbled Plant-Based ParmCrisps
1 apple – peeled, cored and finely chopped
3 stalks celery, finely chopped
3 Tbsp. vegan mayonnaise
1 Tbsp. lemon juice
1 cup roasted hazelnuts, chopped
4 heads of Belgian Endive
- Combine the first 6 ingredients.
2. Separate endives into individual leaves and place on a serving platter.
3. Spoon 2 teaspoons of the mixture onto each leaf.
4. Sprinkle with roasted hazelnuts.
