Chef Paula DaSilva Returns to Miami at New Oceanfront Eatery

ARTISAN BEACH HOUSE OPENS IN BAL HARBOUROne of the year’s most breathtaking and anticipated new restaurants, Artisan Beach House quietly made its debut in the heart of Bal Harbour in early January. The opening of the striking, waterfront restaurant marks the return of Chef Paula DaSilva to the South Florida scene. The beloved culinary darling first came to prominence as executive chef of 1500 Degrees at Miami Beach’s iconic Eden Roc hotel, where she earned national praise for her rustic, soulful cookery. Artisan Beach House, located at The Ritz-Carlton Bal Harbour, Miami, is the second collaboration between DaSilva and restaurant/nightlife impresario Seth Greenberg – the first being 1500 Degrees. Boasting sweeping views of the Atlantic Ocean and Haulover Cut, Artisan Beach House is poised to be one of the region’s most coveted hotspots for 2017.

She is an amazing talent and we had such a great time working together on 1500 Degrees that when the opportunity came to launch something new, at a property as beautiful as this, the decision to partner up again was an easy one.”

Now open daily for breakfast, lunch and dinner, Artisan Beach House features a tempting and varied menu created by DaSilva and Chef De Cuisine Tony Coddington, a Michelle Bernstein protégé and former collaborator of DaSilva’s. The restaurant’s menu is diverse and flavor-forward, inspired by DaSilva and Coddington’s upbringing as well as the various cultural touchstones that they find irresistible.

“There is definitely a global element to the menu but the foundation is approachability. My style is very simple – respect for the ingredients, smart sourcing, proper technique and big flavors,” DaSilva said.

The menu begins with a section of Chef’s Bites – an array of ever-changing small plates showcasing DaSilva and Coddington’s current culinary cravings. Current items include Cassoulet with local beans, farm egg and porcini stock; and Salted Fish Croquettes with pickled okra and preserved lemon maionese. Starters include Country-Style Duck Pâté with smoked bacon, house made pickled vegetables and whole grain mustard; and Crispy Pork Belly with house made kimchee and rice cracker. Composed Mains include a hearty Braised Short Rib with house made tagliatelle, wild mushroom and cream sauce; and Seared Blue Nose Bass with barley, smoked caviar and barigoule sauce. Perfect for sharing, For the Table offerings include Paella with duck confit, artichokes and scallions; and Japanese A5 Wagyu with Himalayan salt and duck fries. Sides round out the menu with Charred Cauliflower with tahini and jalapeno; Thai-style Brussels Sprouts with fermented pepper sauce; Dirty Rice with grits and red peas; and Corn with Espelette and sharp cheddar. Comforting Desserts are a must and include Peanut Butter Donuts with jelly and roasted banana ice cream; Salted Caramel Panna Cotta with caramel popcorn, chocolate and caramel cream; Triple Chocolate Dream with mousse, cake & bar and orange caramel; and Oreo Ice Cream Sammy with chocolate whoopie pie cookie.

Artisan Beach House’s craft cocktail program features contemporary twists on classic favorites. Creative concoctions include Remember The Maine – Rough Rider Bull Moose 3 Barrel Rye with Cocchi vermouth, Leopold Bros. Michigan Tart Cherry liqueur and absinthe; Gin Fizz – Tyler’s City of London dry gin, thyme, lime juice, aquafaba and soda; and an elevated take on DaSilva’s go-to, a Smoked Rum & Coke with Kirk and Sweeney 23 Year Old Rum with coke syrup and soda. Paying homage to DaSilva’s Brazilian background is the Caiprinha, made with Novo Fogo Cachaça, Boomsma Cloosterbitter, simple syrup and lime. From 4 – 6PM daily, guests can enjoy Artisan Beach House’s Happy Hour with an array of specially priced drinks and small plates.

Designed by Petra Hausberger in conjunction with Greenberg, Artisan Beach House features indoor and outdoor waterfront dining and lounge space, as well as several unique special events venues.
