CHEF NATE HEREFORD ANNOUNCES CHICKEN SCRATCH AT CITY FOUNDRY STL

Chef Nate Hereford announces the early fall opening of his Midwest-inspired rotisserie chicken concept, Chicken Scratch, at City Foundry STL (3700 Forest Park Ave, St. Louis, MO, 63108). With Chicken Scratch, Hereford will serve rotisserie chicken and seasonal sides with a variety of house made sauces and specials. City Foundry STL is St. Louis’ first food hall and Chicken Scratch will be one of twelve plus local, chef-driven food concepts opening early this fall. “I’m excited to share the project that I’ve been working on over the past few years”, said Nate Hereford. “One of the big reasons we moved back to St. Louis was to be a part of the tight-knit hospitality community and the amazing creativity happening here and City Foundry seemed like the perfect opportunity. My goal with the menu is to create simple but delicious meals and to highlight seasonal ingredients that showcase rotisserie chicken.”

 

Previously Nate Hereford was the Executive Chef at James Beard Award Winner Chef Gerard Craft’s since-closed Niche, the seasonal tasting menu restaurant in Clayton. In 2016, he was recruited to work on research and development projects in California. Since moving back to St. Louis, Hereford has been consulting on various concepts, doing pop-up events, private dinners, and conceptualizing Chicken Scratch with his wife and business partner Christine.

 

Chicken Scratch is centered around a Rotisol rotisserie oven from France and offers half or whole birds that get a dry brine and house rub before roasting on the spit. The menu offers seasonal sides, salads, bowls, and a variety of rotating specials. Housemade sauces include a tangy yogurt sauce and a salsa verde-inspired herb sauce. Guests can order a la carte or create meals for carryout.

 

Chicken Scratch is a vendor in the food hall of City Foundry STL, the mixed-use development located on Forest Park Avenue between Vandeventer and Spring Street. The food hall will center the development with additional restaurants, shops, entertainment, office space and more. Food hall vendors are slated to open in two waves, with Chicken Scratch in the second wave early this fall.
