Chef Rainer Becker Brings Zuma to Las VegasOn January 28, 2017, a new culinary energy will emerge as Zuma opens its doors for the first time on the West Coast at The Cosmopolitan of Las Vegas, marking the iconic brand’s eleventh location in its international collection.

The foundation of Zuma’s philosophy offers an authentic and complete dining experience, where all elements are of equal importance and each complements the taste and flavor of the cuisine.

On the Plate

Zuma’s menu features a variety of dishes from its three kitchens—the main kitchen, the sushi counter and the robata grill. True to the izakaya experience, guests are offered dishes designed to be shared and brought to the table continuously throughout the meal. The menu offers a wide selection of elegantly presented dishes, including many items that are bolder in flavor than traditional Japanese cuisine.

The main kitchen includes dishes such as – suzuki no sashimiseabass sashimi with yuzu, truffle and salmon roe; hourensou no goma aeblanched baby spinach with creamy sesame dressing; and the tsubu-miso hinadori no oven yakibaby chicken oven roasted with barley miso on cedar wood.

The sushi counter includes offerings like – wagyu gunkan no caviarwagyu beef, ginger and caviar; dynamite spider rollsoftshell crab, chili and wasabi tobiko mayo; and the spicy yellowtail roll yellowtail, serrano pepper, avocado and wasabi mayo.

The robata grill includes gyuhire sumibiya kikarami zuke, a spicy beef tenderloin with sesame, red chili and sweet soy; tori no tebasaki, one of Chef Rainer’s personal favorites, which are sake glazed chicken wings, sea salt and lime; and the wagyu tomahawk steak 28oz with fresh truffle.

In the Glass

Complementing Zuma’s menu is an exemplary bar program featuring heritage cocktails, using fresh ingredients, fruits, and juices; Japanese ingredients like sake, shochu, yuzu and shiso leaves; as well as hand-carved ice blocks shaped appropriately for the cocktail.

Guests will enjoy compelling cocktails like the rubabu with rhubarb infused sake, vodka, passion fruit and lemon; geisha smash with Ketel One, shiso leaves, cucumber, elder flower and yuzu; and the yuzu paloma with tequila blanco, homemade yuzu Campari; soda and green tea salt.

Zuma will also feature the exclusive Zuma Zacapa Live Solera this spring 2017, making the Las Vegas venue one of only 11 restaurants in the world to serve the individually- crafted Zuma Zacapa Live Solera cocktail, blended with locally sourced ingredients before it is aged and served.

Rounding out the beverage program are Zuma’s non-alcoholic cleansers, as well as a diverse selection of sake and wine.

Around the Room

Designed by Noriyoshi Muramatsu of Tokyo-based Studio Glitt, the 9,000 square-foot space will capture the style and elegance of the international Zuma brand. Incorporating the beauty of the four natural elements—earth, fire, water and air, as well as wood, rusted iron, stone and glass, Muramatsu will create a texturally rich, sophisticated yet relaxed ambiance.

Contrasting the neon lights and man-made structures of Las Vegas, many of Zuma’s focal points incorporate organic materials, such as a feature wall composed of natural stone from Chiang Mai, Thailand. The reception desk, bar and sushi counter are all made of grand tree trunks, also sourced from Thailand. The patchwork wall in the lounge has been created from boldly-colored Japanese paper.

The extraordinary restaurant, located on the third floor of The Cosmopolitan of Las Vegas, features beautiful views of the Las Vegas Strip and offers two glass-enclosed private dining rooms, both of which seat 14 guests.

From the 13th – 18th January reservation lines will be open from 9 am – 6 pm. From 19th January the lines will be open from 9 am – 10 pm.

Upon opening on January 28, 2017, reservations will be available daily from 5:45 -11 pm. The bar will be open from 5 pm to 12 am.
