HIGHGATE HAWAII ELEVATES CULINARY OFFERINGS WITH NEW FOOD AND BEVERAGE TEAM APPOINTMENTS

Highgate, a leading real estate and hospitality management company with eight hotels in Hawaii, announced today that Chase Heu has been appointed Area Director of Food & Beverage for Highgate Hawaii and Alexandre Petard has been appointed Executive Chef for ‘Alohilani Resort Waikiki Beach.

In his new role, Petard, a third-generation chef with a deep passion for culinary excellence, will oversee culinary operations, development and programming for ‘Alohilani Resort Waikiki Beach. Prior to joining ‘Alohilani Resort, Petard served as executive chef for BLT Steak Waikiki. For the past 30 years, he has worked in all facets of cooking and management in restaurants across France, England and New York City. During his time in Manhattan, Petard worked in esteemed restaurants including Jean-Georges, Brasserie Les Halles and Brasserie Beaubourg.

 

Heu has over 28 years of experience in the hospitality industry. In his new role, he will oversee Highgate Hawaii food and beverage strategies as well as all restaurant operations for ‘Alohilani Resort. Prior, Heu served as the director of operations for Morimoto Management, where he managed operations for internationally acclaimed Iron Chef Masaharu Morimoto’s two restaurants within ‘Alohilani Resort Waikiki Beach, Morimoto Asia and Momosan. Throughout his career, Heu has worked in major restaurants and casinos such as Caesars Palace, Aria Resort & Casino, Cosmopolitan, the Rio Hotel and Resort and MGM Grand Casino.

 

‘Alohilani Resort Waikiki Beach features four incredible dining options, including two Asian restaurants from Iron Chef Morimoto. In addition, SWELL Bar at the seaside pool deck showcases impressive craft cocktails and an all-day menu with Oahu favorites. Guests can indulge in a new sustainable happy hour series at SWELL centered around locally sourced products that coincide with Earth’s elements. The space transitions into an evening hot spot with live music and “Light Monument,” a large-scale short-film series projecting local art across more than 100 feet. Anchored by the 280,000-gallon two-story Oceanarium teeming with tropical marine life, guests enjoy ocean-inspired craft cocktails, beer and wine at O Bar.
