(July 15, 2025) — The Ava Hotel, a new lifestyle property in downtown Paso Robles and part of the Hilton Curio Collection, has officially announced its food and beverage leadership team in preparation for its highly anticipated Summer 2025 debut. Operated by Azul Hospitality Group, the hotel is assembling a powerhouse of hospitality talent to lead three standout venues: the signature restaurant EMRE by Julien Asseo, Pine Street Bistro, and the rooftop destination Esperanza on the Rooftop.

Together, these concepts aim to deliver hyper-local, chef-driven culinary experiences rooted in Central Coast terroir, community hospitality, and elevated design.

Leading the Charge: A Central Coast Dream Team

The Ava Hotel’s food and beverage team brings together industry leaders deeply connected to the region:

  • Julien Asseo, Consulting Chef and visionary behind EMRE, is a Paso Robles native and acclaimed owner of Les Petites Canailles and S’Aranella. Formerly Executive Chef of the two-MICHELIN-starred Restaurant Guy Savoy in Las Vegas, Asseo’s new concept EMRE will focus on fire-forward Mediterranean cuisine that blends French technique with coastal boldness.
  • Casey McMinn, Chef de Cuisine of EMRE, brings soulful, wood-fired cooking shaped by time at State Bird Provisions (San Francisco) and The Hatch Rotisserie & Bar. His leadership will elevate Asseo’s vision with depth, creativity, and seasonal integrity.
  • Lannon Rust, Beverage Director and Certified Sommelier, joins from Ox & Anchor at Hotel San Luis Obispo. He will curate an expressive, guest-focused beverage program spanning rare vintages, terroir-driven cocktails, and a local coffee collaboration.
  • Brandon Trowbridge, Director of Hospitality Operations, offers more than two decades of global luxury experience—from Napa Valley to Beijing. His guest-first approach will be central to shaping a warm, approachable service culture across all F&B outlets.

EMRE by Julien Asseo

Poised to become Paso Robles’ most dynamic fine dining experience, EMRE will feature whole-grilled seafood, house-made pastas, and dishes kissed by open flame. The design and menu evoke the spirit of the Mediterranean, elevated through local California produce and wines.

Pine Street Bistro

Serving as a casual, all-day gathering spot for locals and guests, Pine Street Bistro will offer comforting yet elevated fare focused on seasonality, simplicity, and flavor.

Esperanza on the Rooftop
