Manuel Fernández Appointed Executive Chef of Bishop’s Lodge, Auberge Resorts Collection in Santa Fe, New Mexico

Bishop’s Lodge, Auberge Resorts Collection, the legendary landmark and luxury resort, announces the appointment of Manuel Fernández as Executive Chef. With more than two decades of experience in some of the world’s most renowned kitchens, Fernández is known for his inventive culinary style, exceptional operational acumen, and deep passion for crafting unforgettable dining experiences.

In his new role, Fernández will lead all culinary operations at the resort, including signature restaurant SkyFire, The Bar, The Prickly Pear, Two Dogs Cafe, and the event and catering programs. Known for his hands-on leadership and intuitive style, Fernández  will bring fresh energy to the food and beverage experience. At SkyFire, he will draw inspiration from New Mexico’s rich ingredients and textures, elevating them with modern techniques. Fernández  will lead the talented culinary team, developing one-of-a-kind recipes and immersive dining experiences that reflect both tradition and creativity. Fernández’ approach will redefine ‘New Mexican cuisine’ by blending locally sourced ingredients with innovative methods, creating soulful and globally inspired flavors.

Originally from Mexico City, Fernández brings a wealth of international experience to Bishop’s Lodge, having served in leadership  chef roles at esteemed hospitality brands including Aman Resorts, Capella Resorts, and Four Seasons. His culinary journey has taken him across the globe – from Mexico to Bhutan, the Dominican Republic to Switzerland, and most recently, Jackson Hole, Wyoming. His previous experience also includes working at the two-Michelin-starred The Dolder Grand in Zurich, Switzerland.

 

A passionate traveler and triathlon enthusiast, Fernández Rodríguez is deeply inspired by global cuisines, classical philosophy, and the transformative power of food. He holds a degree in Culinary Arts Management from César Ritz Colleges Switzerland, as well as from Fundación Mier y Pesado de la Salle in Mexico.
