Hotel Maya Appoints Corey Cohen as Director of Restaurants & Mixology

Veteran hospitality leader brings creativity, operational excellence, and fresh energy to the Long Beach waterfront resort

Long Beach, CA (June 26, 2025) – Long Beach’s newly independent Hotel Maya, an iconic waterfront property, is pleased to announce the appointment of Corey Cohen as Director of Restaurants and Mixology. In this key leadership role, Cohen will oversee all restaurant and beverage operations, with a primary focus on managing the day-to-day operations of Fuego — the hotel’s signature Latin-inspired restaurant — and spearheading its highly anticipated bar and restaurant relaunch.

Over 15 Years of Industry Experience

Cohen brings over 15 years of hospitality experience to Hotel Maya and will be instrumental in revitalizing Fuego’s identity, particularly through a refreshed beverage program and elevated service strategy.

As part of the relaunch, he will:

  • Introduce a new lineup of seasonal cocktails with bold Latin influences
  • Expand the restaurant’s renowned tequila library of over 100 selections
  • Collaborate with the culinary team on immersive dining experiences that blend innovation with local flavor

A Track Record of Innovation and Leadership

Prior to joining Hotel Maya, Cohen served as Food and Beverage Outlet Manager at Hyatt Regency Los Angeles, where he implemented operational improvements and introduced a refreshed cocktail program.

His experience also includes:

  • Opening leadership roles at Moxy/AC Hotel in Downtown LA
  • Managing high-volume venues like Hennessey’s Tavern
  • Overseeing beverage operations at The View Bar and Local Kitchen Tavern

A Passion for Guest Experience and Local Flavor

At the core of Cohen’s approach is a passion for crafting memorable guest experiences — both in flavor and ambiance.

Inspired by Hotel Maya’s vibrant waterfront location and the laid-back sophistication of Long Beach, he aims to build a beverage and restaurant program that is as dynamic as its setting.

Background and Personal Philosophy

A lifelong Southern California foodie and Torrance resident, Cohen holds an MBA from the University of Phoenix. His early inspiration came from cooking with his mother, which continues to inform his leadership style centered on:
