Caviar has long been shorthand for intimidation — white gloves, hushed dining rooms, and a price tag that keeps most first-timers on the sidelines. A Brickell newcomer is betting that the fastest way to grow the category is to strip away the ceremony and serve luxury roe alongside the food people actually crave.

Ockap Caviar & Cuisine has joined the 25th edition of Miami Spice Restaurant Months, the Greater Miami Convention & Visitors Bureau's flagship dining program running August 1 through September 30, 2026. For Ockap, the promotion is a deliberate on-ramp — a chance to put its private-label caviar in front of both curious first-timers and seasoned aficionados at an accessible price point.

Caviar Meets Comfort Food

The Brickell caviar house was founded by Dominican restaurateur Oscar Andrés Brenes in collaboration with Paris-based Ducasse Conseil. The concept centers on a simple, disruptive idea: pair caviar with familiar, unexpected dishes so guests can experience it without the formality.

"We wanted a restaurant that reflects the standards of fine dining without the formality or intimidation that often comes with caviar. Pairing it with familiar flavors and unexpected dishes lets guests experience it in a completely new way," said Brenes.

That philosophy shows up on the plate. Signature dishes include Crispy Fried Chicken & Caviar, Caviar Croquetas, Beef Carpaccio, Charred Citrus Ceviche, and Ribeye & Caviar — high-low pairings engineered to lower the stakes for newcomers while still delivering luxury.

More Ways to Experience Ockap

Beyond Miami Spice, guests can explore Ockap through its traditional caviar service, three Chef's Tasting Menus, and an à la carte menu. The restaurant's signature caviar collection is available by the tin, from 28 grams to one kilogram, across four varieties — Baerii, Ossetra, Kaluga Hybrid, and Beluga Hybrid.

The 60-seat restaurant, which includes 9 bar seats, serves dinner Tuesday through Saturday, with a nightly Caviar Hour from 5 to 7 p.m. beginning August 11.

Why It Matters

Ockap's approach is a case study in category expansion. Caviar's biggest growth barrier isn't taste — it's perception, price anxiety, and the fear of "getting it wrong." By anchoring luxury roe to comfort-food formats like fried chicken and deviled eggs, Ockap converts an occasional splurge into a repeatable, approachable dining experience. Operators watching the premiumization trend should take note: the winning play in luxury foodservice increasingly pairs high-end product with low-intimidation delivery.

Miami Spice itself is the other lever. Fixed-price restaurant weeks are a proven acquisition tool — a bounded, low-risk price point that fills seats during slower summer months and seeds future à la carte and tasting-menu visits. For a young concept, a $95 prix fixe (with strategic upsells like the +$10 ribeye) is smart trial marketing: it builds a first-visit funnel, drives OpenTable and Resy volume, and introduces a private-label product guests can later buy by the tin. That's a full-stack conversion path — restaurant, tasting menu, and retail — built into one seasonal promotion.
