New restaurant and cocktail lounge bring coastal elegance and bold flavor to Miami Beach
MIAMI BEACH, FL – October 27, 2025 — Miami Beach’s dining scene welcomes a vibrant new addition with the opening of Pauline, a seafood-forward restaurant, and its adjoining cocktail lounge, Little Torch, at The Shelborne By Proper, 1801 Collins Avenue. Officially opening on November 9, Pauline marks a defining new chapter in coastal cuisine and cocktail culture, blending Caribbean-Latino influences, Michelin-caliber technique, and the timeless allure of Miami Beach’s Art Deco heritage.
Helmed by Culinary Director Abram Bissell—a Florida Keys native and alumnus of The Modern and Eleven Madison Park—Pauline pays tribute to the region’s coastal bounty with a menu that captures the soul, rhythm, and flavor of the Florida coast.
“Pauline is my love letter to Caribbean-Latino food—rooted in memory and culture, shaped by craft, and grounded in a deep respect for simplicity and the ocean that’s always called me home,” said Abram Bissell. “Returning to Florida after so many years is deeply personal. This restaurant is about connection—about people, food, and place.”
A Culinary Tribute to the Sea
Named in honor of Pauline Baker, wife and muse of legendary cocktail writer Charles H. Baker Jr., Pauline celebrates discovery, romance, and culinary storytelling. Designed by ADC Tuneu Studio, the restaurant’s interiors evoke the elegance of Deco-era Miami with oceanic tones, porthole windows, and bespoke stone detailing—creating a visual dialogue between land and sea.

Little Torch: A Cocktail Hideaway Inspired by the Keys
Tucked just beyond Pauline, Little Torch is an intimate cocktail lounge designed for escape and discovery. Named after Little Torch Key, one of the Florida Keys’ most secluded islands, the lounge merges mid-century nostalgia with Miami modernism through sculptural onyx tables, retro mosaic tiling, and Italian “Cigno” chairs reupholstered in vibrant hues.
Signature cocktails balance artistry and fun:
- Spicy Guava Cooler — mezcal, guava, grapefruit, Empirical Ayuuk
- Modern Vices — clarified piña colada milk punch with strawberry daiquiri foam
- Saints & Sailors — gin, pandan, yuzu, cucumber, sparkling rosé
In true Proper Hospitality fashion, Little Torch will host vinyl DJ sets, cocktail events, and live performances, with karaoke nights reviving one of The Shelborne’s most nostalgic traditions.

Part of the reimagined Shelborne By Proper, both Pauline and Little Torch operate as standalone destinations, each with its own energy, entrance, and identity. Together, they redefine what hotel dining can be in Miami Beach—elevated yet approachable, artistic yet effortless.
Pauline will open for dinner beginning November 9, with brunch and lunch to follow. Little Torch will debut the same evening and extend late into the night.
