1. Heat vegetable oil in a wok or large skillet over medium-high heat.
2. Add diced chicken or shrimp and cook until browned. Remove from wok and set aside.
3. Add diced carrots and onions; stir-fry for 2-3 minutes until softened.
4. Add garlic and stir-fry for 30 seconds until fragrant.
5. Push the vegetables to the side of the wok and add the beaten egg. Scramble until cooked.
6. Add the cooked rice to the wok and break it apart with a spatula. Stir-fry until heated through.
7. Add the cooked chicken or shrimp back to the wok along with the soy sauce, mirin, oyster sauce (if using), and sesame oil.
8. Stir-fry until everything is well combined and heated through.
9. Stir in the green onions. Season with salt and pepper to taste.
10. Serve immediately.
