Onda by Santaella debuts as a seasonal seaside dining experience inspired by Puerto Rican gastronomy and coastal sophistication
BOCA RATON, Fla. – November 5, 2025 – The Beach Club at The Boca Raton proudly announces the launch of Onda by Santaella, a new luxury dining experience in collaboration with celebrated Puerto Rican chef, restaurateur, and author José Santaella. This seasonal culinary residency introduces an inspired menu rooted in the vibrant flavors, colors, and textures of Puerto Rico, offering guests and Club members an immersive taste of Caribbean artistry by the sea.
Set against the backdrop of The Boca Raton’s private golden shoreline, Onda by Santaella captures the essence of sun-soaked coastal living through dishes that balance refinement with approachability. Each winter, Onda partners with a world-class chef to transform its menu, and this season, Chef Santaella brings two decades of culinary mastery and global influence to Beach Club’s signature beachfront restaurant.

A native of San Juan, Chef Santaella is best known for his award-winning restaurant Santaella, located in the La Placita district of Santurce. There, he reimagines comida criolla—the soulful flavors of his homeland—through a contemporary lens, blending tradition with modern technique. His culinary journey includes apprenticeships with renowned chefs Ferran Adrià (El Bulli), Eric Ripert (Le Bernardin), and Gary Danko, shaping his signature approach to ingredient-driven, globally inspired cuisine.

At Onda by Santaella, guests can begin with handcrafted cocktails featuring Don Q Light Rum from Puerto Rico, followed by small plates designed for sharing. Menu highlights include:
- Asian-Style Tuna Pinchos with crunchy rice chicharrón
- Chorizo & Sweet Plantain Empanadillas
- Pork Belly Salad with watermelon, mango, and Puerto Rican cheese
- Fried Whole Red Snapper with cilantro chimichurri
- Cocada Coconut Custard with almonds and tropical Baked Alaska
Desserts reimagine tropical flavors through a modern lens, such as Guava & Cream Cheese Bread Pudding—a nod to the nostalgic sweets of the Caribbean.
About Beach Club at The Boca Raton
Unveiled in January 2025 following a $130 million transformation, the Beach Club features three pools, dynamic event spaces, and two signature oceanfront restaurants Onda and Marisol, offering Mediterranean-inspired fare.
