CHEF BRIAN MALARKEY’S HERRINGBONE SETTLES INTO ITS NEW HOME AT ARIA ON DECEMBER 28The burgeoning dining scene in Las Vegas continues to heat up with Chef Brian Malarkey’s acclaimed ocean-to-table concept, Herringbone, anchoring in its new Las Vegas location on Monday, December 28th at AAA Five Diamond ARIA Resort & Casino. Herringbone Las Vegas will feature a Sin City spin on the wildly successful flagship locations in La Jolla, CA and Santa Monica, CA. While staying true to its signature “Fish Meats Field” philosophy and offering market-driven creations from Executive Chef Geno Bernardo that juxtapose the flavors of sea and land, Herringbone Las Vegas will offer a relaxed yet refined dining experience with lounge-style seating and nightly live music.


“I always strive to incorporate the culture of a restaurant’s new home into its overall vision,” said Malarkey, who opened his acclaimed Searsucker in Las Vegas last spring. “At Herringbone Las Vegas, you’ll still get all the delicious food and beverages for which the restaurant is known served lounge-style, with tableside cocktail service, and live music. We’re doing ocean-to-table, à la Las Vegas.”


Like its two Southern California-based locations, Herringbone will showcase sustainable, responsibly sourced ingredients from ocean, ranch, and field, creating an accessible menu infused with Malarkey’s well-known sense of culinary creativity. Diners can begin (or make) their meals with options from the Salt & Brine bar, a comprehensive experience that features fresh seafood ranging from Pacific-bred oysters to octopus with salsa verde alongside an assortment of complementary charcuterie. Rounding out the starters are shareable plates such as the “Baja Style” Shrimp Ceviche with avocado, chili lime, and cilantro and Crab Cake Poppers with Old Bay seasoning and tomato bacon jam that are the ideal prelude to heartier dishes.


At lunch, afternoon diners can bite into the Baja Fish Tacos with grilled fish, jicama slaw, roasted tomatillo salsa, and lime crema or an Ahi Tuna Burgerwith Asian slaw, wasabi, and a soy honey reduction. Finally, those craving something more substantial for dinner can enjoy popular entrée selections like the Seafood Spaghetti with lobster, crab, scallop, shrimp, and spicy tomatoes, Seared Yellowfin Tuna with peppercorn, baby bok choy, shitake mushrooms, and red wine or the Colorado Lamb Rack with goat cheese mashed potatoes and wild mushroom.


Complementing the distinctive cuisine will be a selection of whimsical cocktail specialties like the Tiki Bandwagon with Bacardi Maestro de Ron, Atlantico Reserve, Art in the Age Snap, orgeat, lime juice, and chocolate bitters and the Watch Your Step with Barsol Pisco, Celement Mahina Coconut, habenero shrub, yuzu juice, turbinado syrup, and blackberry. Tableside cocktail service for those looking to invent their own cocktail creations will also be available, and include a wide variety of 375ml liquor bottles served alongside fresh juices such as cucumber, grapefruit, ginger and mango. A thoughtfully composed wine list will spotlight international varietals served by the glass and offer classic, avant-garde, and organic selections available by the bottle. Rounding out the beverage program will be a host of craft beers and, for those looking for a punch of flavor without the alcohol, a variety of fresh juice mocktails.


With the New Year only days away from Herringbone Las Vegas’ opening, the dining destination will offer New Year’s Eve packages, including a celebratory blowout bash with live music and DJ set. Guests may choose from two festive options offered exclusively during December 31st dinner service, available for purchase by visiting Herringbone online.

Conceptualized by acclaimed designer Munge Leung, Herringbone Las Vegas will offer a unique dining experience to visitors with lounge seating throughout the interior and exterior of the restaurant. The sweeping 5,500 square foot patio will feature covered cabanas as well as traditional tables surrounded by a lush garden landscape, bringing the restaurant’s locally sourced ethos to life and providing the ideal backdrop for a spirited al fresco meal.


Herringbone is located on ARIA’s second level promenade and will be open for lunch and dinner daily, with weekday Oyster Hour, live music events, and weekend brunch to follow.
