Behind every sold-out arena concert, family show, or hockey night sits a food and beverage operation that either makes the night or breaks it. As the Great Lakes Bay Region's premier entertainment venue heads into a milestone season, it's betting on a leader who has run that gauntlet at the highest level — and who knows the neighborhood.
The Dow Event Center and Legends Global have appointed Joseph Stetson as Director of Food & Beverage Operations — a newly created leadership position overseeing all F&B across the downtown Saginaw, Michigan facility. Legends Global, the venue's food and beverage operator and management company, framed the hire as a step-change in how the venue serves its guests.
A 30-Year Résumé Built for High-Volume Venues
Stetson brings more than 30 years of executive chef and food-service leadership experience to the role. His track record reads like a case study in scale meeting craft:
- Traveling executive chef supporting large-scale professional stadiums and convention centers across the country
- Owner and operator of a local fine dining restaurant for 13 years
- Executive Corporate Chef at Dow Chemical for 13 years
In his new post, Stetson will lead food and beverage service for every sporting event, concert, family show, conference, banquet, and event hosted at the venue — home to the Ontario Hockey League's Saginaw Spirit and the Arena Football One League's Michigan Arsenal.
Consistency, Efficiency, and Local Partnerships
Stetson's stated priorities are refreshingly operational rather than flashy: deliver consistent quality and reliable service for every Saginaw Spirit game and event as the team enters its 25th anniversary season, strengthen operational efficiency and standards across all F&B operations, and develop practical partnerships with local and regional businesses that enhance the guest experience.
"It's rare to find someone who's run high-volume venue operations at that level and also has real roots in this community," said Kevin Murphy, General Manager of The Dow Event Center. "Joseph brings both. That combination will matter as we head into the Spirit's 25th-anniversary season, and I expect our guests and partners will feel it in the day-to-day consistency."
Andrew VanDeweghe, Regional Director of Food & Beverage for Legends Global, pointed to the dual mandate of operational muscle and community connection.
"Joseph understands both the operational demands of large entertainment venues and the importance of building strong community partnerships," VanDeweghe said. "His leadership, culinary expertise and commitment to consistency will elevate our food and beverage operations while creating new opportunities to showcase local flavors and deliver an outstanding experience for every guest. We are confident he will build on the venue's success while positioning it for continued growth."
Stetson, for his part, framed the job around the venue's role as a gathering place.
"I'm honored to join Legends Global and The Dow Event Center in this new role," Stetson said. "This venue is not only home to the Saginaw Spirit but also an important gathering place for the community. I look forward to building on an already strong foundation by delivering consistent quality, efficient service, and meaningful partnerships that benefit our guests, our local businesses and everyone who visits the venue."
Why It Matters
For venue operators and foodservice executives, this hire is a quiet playbook. Legends Global — a partner that spans more than 450 venues, 20,000 events, and 165 million guests annually — didn't chase a celebrity chef. It created a dedicated director role and filled it with someone who pairs stadium-scale operational chops with genuine local roots. That's a deliberate signal about where venue F&B is heading.
Three takeaways for operators and procurement directors watching this space:
- Consistency is the product. In high-volume entertainment settings, guest satisfaction hinges less on the marquee menu item and more on reliable execution across every game, show, and banquet. Naming a single accountable leader is how you get there.
- Local sourcing is now a strategy, not a slogan. Practical partnerships with regional businesses to "showcase local flavors" double as guest-experience differentiators and community goodwill — a hedge worth studying for any venue or institutional buyer.
- Milestone seasons raise the stakes. A 25th-anniversary run is exactly when operational slip-ups get noticed. Investing in F&B leadership ahead of a tentpole season is a proactive risk-management move.
For F&B professionals, the message is clear: the operators winning in venue hospitality are the ones treating food and beverage as a core discipline with dedicated leadership — not an afterthought bolted onto the ticket.
