Notable chefs and farmers will spotlight their culinary passion for old world cooking techniques and global grilling traditions at a hyper-local six-city culinary tour across North America.

NEW YORK (JUNE 30, 2015) – The country’s most talked about culinary tour is announcing the North American tour cities for its Heritage Series that includes Heritage Fire, in its seventh year, and the Heritage BBQ tour, now in its fourth year. Next up, Heritage Fire in Napa followed by five Heritage BBQ events stretching from the Bay Area to Canada. The start of the Heritage Series marks the halfway point for the US Tour where the focus goes from fine-dining to old world cooking when the winner of ten-city Cochon 555 is announced at Grand Cochon in Aspen/Snowmass which has quickly climbed the ranks of the most sought after ticket during the week of Food & Wine Classic in Aspen.

  • Second Annual Heritage BBQ Washington DC (October 4) at Dock 5 Union Market
  • Second Annual Heritage BBQ in Austin (October 18) to close the series
Heritage Fire by Cochon 555 is a series of annual events spotlighting wood-fired techniques that celebrate responsibly raised heritage breed animals (beef, lamb, goat, rabbit, and birds) and the people growing them with purpose and passion. Heritage Fire is the perfect equation of traditional, whole animal cooking techniques paired with premium beverages from over 50+ chef created dishes over live-fires. The event is non-competition, a culinary celebration event, according to Founder Brady Lowe.

Heritage BBQ by Cochon 555 is a friendly competition between [5] chefs cooking whole pig for a group of 20 celebrity judges. A panel of 20 respected judges will vote for the city’s “BBQ King or Queen.” Each event also includes a non-competition spotlight called “BBQ Traditions” where up to 18 notable chefs cook [1] dish from a list of 20+ international styles. This is North America’s only “World’s Fair of Global BBQ”, a traveling exhibition featuring top chefs cooking styles like Hibachi, Korean BBQ, Asado, Braai from Africa, Char Siu from China, Lechonera from Puerto Rico, Churrasco from Brazil or Barbacoa from Mexico, as well as regional American BBQ styles from the Carolina’s to Kansas City. BBQ Traditions is an edible education on the finest social tradition in human history and the Heritage BBQ tour motivates grilling communities worldwide to support local food producers, and to break ground on a new hyper-local, globally-themed BBQ culture.

A stunning lineup of sponsors will be on the road, including a live butchering demonstration with Williams-Sonoma and a local butcher, delicious Wines from Rioja, and a very special BBQ Tradition featuring Creekstone Farms. To celebrate National Bourbon Month, a “Perfect Manhattan” Bar presented by Wilsonart featuring Eagle Rare, Buffalo Trace, Breckenridge Bourbon, Hirsch and Luxardo will be part of the Grand Prize at each and every event.
