Culinary Veteran Brings Over 20 Years of Global Experience to Lead the Resort’s Next Culinary Chapter
SANTA BARBARA, CA – November 5, 2025 — Hilton Santa Barbara Beachfront Resort is proud to announce the appointment of Mary O’Neill as its new Executive Chef. Bringing more than two decades of culinary expertise and a passion for globally inspired California cuisine, O’Neill will oversee all culinary operations across the resort’s 24-acre oceanfront property, including its signature restaurant The Set, as well as banquets, catering, and seasonal dining programs.

A Distinguished Culinary Career Spanning the Globe
Born in San Francisco and raised throughout California, O’Neill began her hospitality career in the front of the house before transitioning into the kitchen — a move that shaped her holistic approach to service and dining. She later pursued formal culinary training in France, earning her Certificat d’Aptitude Professionnelle – Cuisine from the Académie de Grenoble.
Her early career included roles at some of the Bay Area’s most acclaimed fine dining establishments, including Aqua under Michael Mina and Jardinière with Traci Des Jardins. O’Neill’s global perspective was further enhanced by collaborations with chefs specializing in Singaporean, Thai, Moroccan, Nepalese, and Korean cuisines, allowing her to create dishes that are both adventurous and authentic while remaining deeply rooted in California’s seasonal ingredients.
Leadership Within Hilton and Beyond
Prior to joining Hilton Santa Barbara Beachfront Resort, O’Neill served as Executive Chef at Parc 55 Hotel by Hilton in San Francisco, overseeing culinary operations for the 1,000-room property. As part of Hilton’s Executive Chef Task Force, she provided leadership and operational guidance to Hilton hotels nationwide, helping properties optimize food and beverage programs during transitions and staffing shortages.
Earlier in her career, O’Neill also served as Executive Chef at UCSF Benioff Medical Center, where she helped open the Mission Bay campus and led the Nutrition and Food Services team through state licensure a testament to her operational discipline and culinary innovation.
Renowned for her thoughtful use of bold flavors, seasonal produce, and artistic presentation, O’Neill’s culinary philosophy emphasizes balance, creativity, and a deep respect for local sourcing.
