KYU Expands to Fontainebleau Las Vegas

Asian-inspired, wood-fired hotspot, KYU, famed for its Miami, New York and Mexico City locations, opened on Thursday, December 14 at Fontainebleau Las Vegas, a 67-story luxury resort and casino on the Las Vegas Strip. From an expertly crafted menu to stunning interiors, featuring a plant moss wall, signature wooden tables and leather back chairs, to mural art seen throughout the 5,000 square foot space, KYU is making a sizzling entrance to Las Vegas’ food and beverage scene for their first restaurant on the West Coast. Guests will enjoy the rich exploration of interpretive Asian cooking with stunning signature favorites for lunch, dinner and weekend brunch, all with a backdrop of the Las Vegas Strip for a dining experience like no other.

 

ASIAN-INSPIRED MENU

Inspired by global travels, KYU’s menu is led by Executive Chef Chris Arellanes and includes KYU classics, along with unique dishes only available at the Las Vegas location. Las Vegas additions to the menu include Royal Golden Chicken served with foie gras, black truffles and smoked caviar cream; Scallop Gyoza made with persimmon and lemon dashi; and an impressive Wagyu Tartar with bone marrow, furikake aioli and perilla seeds. True to KYU’s unique brand, guests can watch their dishes come to life from its open kitchen concept.

Favorites from KYU’s traditional menu include snacks such as Krunchy Kale with nam prik and togarashi, to lighter fare including Tuna Crispy Rice with gluten-free and plant-based options. Famed smoked and wood fired offerings include Braised Short Rib with sesame crust and sweet soy; Duck Breast; Korean Fried Chicken with chili butter and braised spinach; Stone Pot Fried Rice and its famous Roasted Cauliflower with goat cheese and shishito-herb vinaigrette.

 

For lunch, a robust menu includes select favorites from KYU’s dinner menu, along with exclusive additions like Ssamjang Chicken Sandwich made with roasted garlic aioli and Korean chow chow; Khmer Pork Bahn Mi with Vietnamese ham, daikon and carrot pickle; and Smoked Ribeye French Dip with grilled jalapeno aioli, fried egg and black garlic jus.

ALL-NEW BESPOKE COCKTAIL PROGRAM

Bring on the libations! KYU’s cocktail menu is bar none with expertly crafted drinks that quench any thirst. Enjoy exclusive, Vegas-only cocktails such as The Future of Ronin, a passionfruit sake swizzle made with mango and passionfruit sake, Diplomatico Mantuano, ginger, mint, Thai basil, lime and finished with club soda along with KYU’s full cocktail menu including Pink Puppy, a lychee martini made with Haku vodka, lychee, yuzu and Peychaud’s bitters; and the beloved She-So Spicy, a spicy shiso sour made with Milagro blanco, cucumber, mint, shiso, yuzu and Thai chili.

 

A new zero-proof cocktail menu includes standouts such as Buddah’s Bar Seat, a spin on the classic negroni made with Caleno, Lyre’s Apéritif Rosso and Lyre’s Italian Orange; Hickory Chicory Doc, a riff on the espresso martini made with Lyre’s Coffee Originale, Lyre’s Orange, Chickory, Pomelo and Vanilla Cold Brew and Vanilla Syrup, and more.

 

GIVING BACK WITH KYU

Through prioritizing sustainability and giving back to the planet, KYU supports 1% for the Planet, where a minimum donation of 1% of sales from its Roasted Cauliflower dish support environmental nonprofits. Additionally, the wood-fired restaurant has a longtime partnership with Trees For The Future, dedicated to planting new tress in dozens of countries and revitalizing hundreds of thousands of acres of soil. Guests who dine at KYU have the option to “Buy 50 Trees for $5.00,” where the restaurant will match donations each month.

KYU is set to be the talk of the town as it debuts at Fontainebleau Las Vegas, a 67-story luxury resort and casino on the Las Vegas Strip. Located on the casino floor adjacent to the South pedestrian entrance, KYU’s dining room can seat up to 198 guests with a private dining space for 20 to enjoy, with views of the bustling open kitchen and Las Vegas Strip.
