Le Rêve Restaurant & Raw Bar has named Jeff Armstrong its new executive chef, effective August 12. Armstrong will hold that role while continuing as executive chef at The Warehouse Gastropub, giving him culinary command of two of Sheridan's most distinctive dining rooms.

The move lands at a pivotal moment. Le Rêve, which opened in 2024 inside Sheridan's Historic Cady Building, has become one of the region's premier dining destinations — and it just unveiled a new full kitchen, dramatically expanding what the team can put on the plate.

A Two-Decade Résumé Built on Seasonality

Armstrong brings more than 20 years of experience from acclaimed restaurants and luxury resorts across the country. His credits include the Four Seasons Resort & Residences Jackson Hole, Westbank Grille, and Chef Michael Mina's Handle Bar.

His signature is a style he describes as refined yet approachable, anchored in seasonal ingredients, thoughtful technique, and dishes plated to make guests slow down.

New Kitchen, New Signature Dishes

The appointment coincides with Le Rêve's newly unveiled full kitchen, and the menu is already reflecting the upgrade. New signature dishes include:

  • Oxtail Bolognese with house-made mafaldine, shaved pecorino, bottarga, and root-to-shoot micro kale.
  • Deconstructed Beef Wellington featuring grilled American Wagyu tenderloin, mushroom-leek pithivier, creamed spinach, sauce Bordelaise, and celery root potato purée.
  • Sake-Broiled Chilean Sea Bass served with shrimp dumplings, julienned carrots, leeks, maitake mushrooms, and Bloomsdale spinach in a fragrant shiso broth.

A Gracious Handoff

Armstrong's first night of service will be Wednesday, August 12, following founding Executive Chef Zoilan Ruiz's final service on Sunday, August 8. Guests are invited to celebrate Chef Ruiz's tenure during his Farewell Tasting Dinner on Tuesday, August 4, beginning at 5:30 p.m. The ticketed event offers limited seating, and reservations can be made here.
