Late this year, restaurant group Grupo Carolo will bring its upscale Mexican restaurant, La Popular Claremont , to the United States from one of the top gastronomic epicenters of the world, Mexico City. La Popular will debut its first location in Roseville, Calif. in November 2022, followed by Austin, Texas in February 2023, as well as Claremont, California and Porter Ranch in California later next year.
An elevated, energetic destination, La Popular will present authentic Mexican cuisine that proudly represents the genuine culture, traditions, and history of Mexico, and an innovative and extensive agave-centric cocktail program combined with warm hospitality. The restaurant will present an elevated take on straightforward dishes by using exceptional ingredients, adventurous flavors, and innovative preparations. Chic modern interiors and covet-worthy playlists will create an unbeatable fun vibe for guests.
La Popular’s Roseville opening will mark the first United States destination from Grupo Carolo, one of the most recognized restaurant groups in Mexico City. With over 27 restaurants, Grupo Carolo’s vision is to bring exquisite gourmet Mexican cuisine to its guests with an air of warmth, excellence, and genuine hospitality.

For its United States openings, Grupo Carolo will partner with the California-based hospitality group responsible for more than 26 Eureka! restaurants, and new concepts opening in 2023 including The Amalfi Llama and Electric Pickle.

La Popular will be helmed by Executive Chef César de la Parra Coghlan, who has more than two decades of experience working in all aspects of culinary and hospitality. A Mexico City native, he joined Grupo Carolo in 2013, and now oversees the menu development for 27 restaurants in Mexico and 26 Eureka! restaurants in the United States. Chef César’s passion for food began working on his family’s ranch; prior to his current role, he trained at a variety of Michelin-star restaurants around the world. An instrumental member of the leadership team at La Popular, he looks forward to being part of its continued success and expansion in the United States.

Created by Vice President of Beverage Operations Trevor Tyler, the agave-centric beverage program at La Popular will be centered around unique experiential craft cocktails. The bar will highlight an impressive selection of agave spirits encompassing more than 80 labels of tequila and mezcal. The library will feature rare Mexican spirits as well as emerging artisan products, sourced from a variety of small-batch distilleries in Oaxaca, Jalisco, and Guadalajara.
