Bentley & Friends” dinner series, two Spring dinners will be held at Mi Amor on April 19 and May 29, featuring US star chefs Justin Smillie of New York City’s Upland and Christian Page of California’s Short Order. Chef Paul Bentley of Mi Amor has selected the chefs in the series based on his personal relationships with them and his admiration of their culinary creativity on both the East Coast and West Coast of the US. Chef Smillie’s April dinner will present an exciting fusion of California’s Asian and Italian cultures. May’s menu from Chef Page offers up a selection of Mediterranean tastes based on local ingredients.

Exclusive to the “P. Bentley & Friends” dining series, Jasper Soffer of NYC’s acclaimed Mulberry Project, designed a cocktail called “The Bentley,” based on Chef Paul’s taste and style of cuisine. The cocktail kicks off the evening as the welcome drink and is complemented by Mi Amor’s own menu of ingredient-driven cocktails, also by Soffer, categorized under diverse headings like creative Gin & Tonics or Champagne Cocktails with fun creations such as the Sonny & Cher, a tangy mix with tangerine and bitter liquors. In another artisanal triumph that comes from years of experimentation and knowledgeable mixology, Soffer draws inspiration from Mi Amor’s spa and its healing doTERRA oils to develop cocktails that not only refresh but also have a wellness benefit.

For those who prefer wine, Mi Amor’s new wine list has been curated by NYC sommelier Ryan Mills-Knapp and incorporates up-and-coming Mexican vintages along with organic, natural and biodynamic wines.

Dining at Mi Amor
Mi Amor’s glass-walled restaurant, set at the edge of the Caribbean Sea, celebrates Chef Paul Bentley’s modern bistro fare, a style honed from his days in Australia and France and enhanced by his current tours in Mexico. In addition to Mi Amor, Chef Bentley oversees Guadalajara’s Magno Brasserie, named “The Best Casual Dining in Mexico” by Mexico’s Gourmet AWARDS; Bovine in San Miguel de Allende, cited as one of the best restaurants in Mexico by San Pellegrino’s Culinaria Mexicana 2019; and five other restaurants in Mexico. He is known for Asian-inflected dishes like tuna sashimi with ponzu sauce, shaved avocado and coriander; grilled blue shrimps prepared Mediterranean-style with charred lemon and aioli; vegetarian pastas; as well as Mexican-style fish and sikil pak, a Mayan pumpkin seed dip that will make you forget you were ever obsessed with guacamole.

Mi Amor’s airy setting affords views of the rocks overlooking the ocean and the ocean itself. The sounds of the crashing waves set the tone for a casually elegant meal. On request, diners can reserve one of the tables on the rocks themselves, for an outdoor dining experience unlike any other.
