Guided by the talented young creative director, Giovanni Moncada, EMME offers an elevated Italian Contemporary approach with menus that reinterpret the vast Italian food culture with freshness and imagination. Having recently returned to Rome after six years studying under some of the greatest chefs and restaurants in the world including Marea in New York, Bulgari in Tokyo, Heinz Beck’s La Pergola in Rome and the fabled Noma in Copenhagen, Moncada looks to inspire, incorporating seasonal elements from local purveyors and paying rigorous attention to sourcing the best local ingredients and quality of raw materials. In his role, he aims to help solidify EMME in its position as one of the top culinary spots in Rome.

Offering two distinct menus for lunch and dinner, EMME Restaurant proposes Moncada’s take on authentic traditional Italian flavor profiles with a sophisticated, creative twist. EMME’s lunch menu presents fresh fruit extracts and smoothies, innovative salads, comfort-food cravings, healthy choices such as Seared Tuna and Veal Scallopini and a vibrant cornucopia of vegetable dishes including Red Chicory and Broccoletti. EMME’s dinner guests may choose to enjoy a tasting menu or select options a la carte including stunning starters like the Sous-Vide Soft Poached Egg with tomato sauce, croutons, almonds and parmesan and Langoustine Tartare, first courses such as Roman Gnocchi with fresh mushrooms, a spin on Rome’s traditional Gricia pasta with Ravioli filled Gricia or delicate Lemon Risotto and main courses including Seared Yellow Tail fillet and Veal with spinach, hazelnuts and summer truffles.

Executive Pastry Chef Maria Chiara Serges, whose background includes stints with Heinz Beck’s La Pergola in Rome and Joel Robuchon’s Atelier Etoile in Paris, has recently joined Moncada’s young team. Serges’ elegant pastries delight and charm with sweet sophistication from her secret recipe, honed in Paris, for Soufflé al Cioccolato to the scrumptious Crostatina alla Cannella with cinnamon, fresh ricotta and figs to reimagining the more traditional Italian dolce of Tiramisu and Panna Cotta.

EMME’s wine list has been carefully curated by Moncada and his staff to offer a balanced choice of vintages to satisfy every palate. Their philosophy is to expertly select the best vintages from historic producers of different Italian winemaking regions in order to complement the flavors and freshness of the menus.
