Executive Chef Sydney Jones and his culinary team’s newest offerings introduce hints of Italian flare and highlight the summer’s most refreshing flavors in a delectable lineup of dishes and pairings.

“Consistently evolving our menu at DJT, our summer additions extend our locally-sourced, farm-to-table program and introduce more of an Italian influence, which is one of my favorite cuisines,” said Executive Chef Sydney Jones. “We’re incorporating more Italian vinegars and oils, Italian wines, Focaccia breads and scratch pastas. Visitors will see even more of these Italian cooking techniques infused into new items as we move into fall.”

The Chef’s Summer Tasting Menu now available offers a delicious five-course meal celebrating the season, with a recommended, optional wine pairing for $100, otherwise $75 without. The special prix-fixe menu changes weekly each Tuesday. DJT continues to feature its Prime Pick weekly chef-inspired butcher selection showcasing rare cuts of meat prepared using creative sauce and spice mixtures.

The summer menu boasts tasty new appetizer, soup and salad selections including:

  • Ahi Crudo with Spanish octopus, fennel, pink grapefruit, fennel pollen and yuzu
  • Chilean Rope Mussels with tomato-chorizo broth, citrus gremolata and grilled baguette
  • Grilled Pork Belly with caramelized apricot puree and pickled summer bean salad
  • Yellow Tomato Gazpacho with roasted garlic and anchovy cigar, basil oil and micro basil
  • Jumbo Lump Crab Salad with pickled scallions, watermelon vinaigrette, cucumber and celery hearts
  • Farmer’s Market Vegetable Salad with goat cheese crostini, zucchini, carrot, cucumber, yogurt dill dressing and pine nuts
  • Watermelon Salad with escarole, feta cheese, local radish and citrus vinaigrette

Capellini pasta with stewed heirloom tomatoes, basil, Bottarga and herb focaccia bread crumbs

Mouthwatering entrées and accompanying side-dishes now available include:

  • Capellini Pasta with stewed heirloom tomatoes, basil, Bottarga and herb focaccia bread crumbs
  • Atlantic Cod with summer heirloom tomatoes, wilted Bloomsdale spinach and caper shallot vinaigrette
  • Grilled Quail with caramelized fig, grilled heirloom okra, crispy shallots and pancetta-balsamic vinaigrette
  • Day Boat Scallops with corn puree, Southern succotash and vanilla brown butter
  • Mac & Cheese with Tahoe white cheddar, Maine lobster and panko
  • Crispy Artichokes with Pecorino cheese and chili aioli
  • Roasted Maitake Mushrooms with Ricotta salata, Meyer lemon, chili and Ligurian olive oil

The summer season’s best ingredients are showcased in the following desserts:

  • Tahitian Vanilla Bean Pana Cotta with macerated berries and short bread cookie
  • Black Plum Cobbler with salted caramel ice cream and candied almonds
