Pancakes have always sold nostalgia. But nostalgia alone doesn't cut it in a breakfast aisle now defined by protein counts, fiber grams, and clean-label scrutiny. Minnesota's Seven Sundays is betting it can have both — and it's calling the play Oatcakes.

The family-run breakfast brand is rolling out what it describes as a first-of-its-kind pancake mix that fuses the staying power of its Protein Oats with the comfort of a fluffy weekend stack. The pitch to shoppers is refreshingly simple: satisfaction that eats like pancakes, nutrition that behaves like oatmeal.

What's Inside the New Oatcakes Mix

Each serving delivers 10 grams of protein and more than 20% of the recommended daily value of fiber. The format is deliberately low-friction — just add water, mix, and cook like a traditional pancake, with breakfast on the plate in minutes.

On the label side, Seven Sundays leans into the clean-ingredient positioning that has defined its lineup:

  • No refined sugar
  • No glyphosate
  • No artificial flavors
  • No gluten

Oatcakes launch this month at Target, Sprouts, Fresh Thyme, and SevenSundays.com for $7.49 each, in three flavors: Original, Double Chocolate, and Pumpkin Spice (available for a limited time).

A Breakfast-Table Origin Story

The concept started where most family food traditions do — at the kitchen table of founders Hannah and Brady Barnstable.

"Some of our favorite family memories happen around breakfast, but weekday mornings don't always leave room for those moments," said Hannah Barnstable, Founder and CEO of Seven Sundays. "Oatcakes were our way of bringing a little bit of Sunday into the everyday. We want to give families the comfort and taste of pancakes with the nourishment of oats, making it easier to enjoy a breakfast that feels special, even on the busiest mornings."

The launch extends a brand that has methodically reimagined breakfast staples — cereal, granola, muesli, and Protein Oats — with real ingredients and nostalgic flavors. Oatcakes is the first move that takes Seven Sundays "beyond the bowl" into a griddle format.

Sustainability Baked Into the Brand

Seven Sundays traces its roots to a Minneapolis farmers market and has built its identity around planet-friendly sourcing. Since 2020, the brand says it has diverted more than 350 tons of waste from the food system by using upcycled ingredients. Its products are sold at Costco, Target, Walmart, Kroger, Sprouts, Whole Foods, and more, and skip artificial or "natural" flavors, dyes, preservatives, refined sugars, GMOs, and glyphosate.

Why It Matters

For grocers, buyers, and foodservice operators, Oatcakes sits squarely at the intersection of two of the strongest signals in food right now: high-protein positioning and fiber's rise as the breakout nutrient. A shelf-stable, just-add-water format that hits 10g protein and 20%+ daily fiber checks the better-for-you boxes without demanding a cold-chain or prep overhaul — a meaningful advantage for procurement and merchandising.

A few takeaways worth acting on:

  • Category expansion, not cannibalization. Moving from oats into a pancake format shows how a clean-label brand can enter an adjacent, impulse-friendly aisle while keeping its nutrition story intact.
  • Clean label is now table stakes. No refined sugar, no gluten, no glyphosate, no artificial flavors — the free-from claims are the entry ticket, and protein-plus-fiber is the differentiator.
  • Upcycling is a retail-ready ESG hook. The 350-tons-diverted stat gives sustainability-minded retailers a concrete story for shelf talkers and buyer decks.
  • Convenience is the wedge. The "Sunday feeling on a weekday" framing targets time-strapped households — a durable demand driver for grab-and-prep breakfast SKUs.

For operators watching the better-for-you breakfast space, this is a template: take a familiar comfort food, re-engineer it around the nutrients shoppers are now reading labels for, and keep the prep dead simple.
