Proceeds from the collaborative dinner at Guard and Grace will go toward the Kokua Restaurant and Hospitality Fund benefiting the hardworking restaurant, bar and hospitality workers displaced by the devastating wildfires that have impacted the west Maui community.

Says Guard, “We are excited to welcome Chef Zimmern to Guard and Grace and help support the people of Maui. What happened in my hometown is just devastating, and it’s so important to all of us in the culinary community to support each other.  Andrew and I had a lot of fun putting together this collaborative dinner filled with unique and complex dishes that represent worldwide cuisine. I don’t want to reveal too much, but our guests are in for some unexpected and exciting bites.”

Comprising a total of six courses, the dinner kicks off with passed hors d’oeuvres and finishes with a delectable dessert. These collaborative creations draw inspiration from Chef Zimmern’s global expeditions, complemented by Chef Guard’s expertise in contemporary American cuisine with Asian and Hawaiian influence.

Among the standout dishes are Zimmern’s Shrimp and Pork Wontons featuring a blend of hot chile oil and scallions and a Veal Tongue Tonnato topped with a pistachio crumble, olives, lemon, and herbs. Chef Guard created menu items for one evening only including an Oak Grilled Short Rib served alongside a noodle salad and gochujang vinaigrette and a Chinese Style Squab partnered with congee and Kabocha squash.*
