THE FORTHCOMING AVA HOTEL, OPENING THIS SUMMER IN PASO ROBLES, ANNOUNCES SIGNATURE RESTAURANT “EMRE” BY CHEF JULIEN ASSEO

The Ava Hotel, set to begin welcoming guests this summer, proudly announces its signature restaurant concept: EMRE, as a vibrant new addition to Paso Robles’ coveted culinary scene. Concepted by beloved local chef Julien Asseo—owner of both Les Petites Canailles and S’Aranella in town—EMRE will bring a bold and contemporary new offering to the Central Coast, featuring a fire-forward menu inspired by the coastal borders of the Mediterranean. As the signature of the property’s three dining outlets, which will be complemented by a streetside café and vibrant rooftop lounge, EMRE is rooted in the region’s seasonal bounty and traditions of shared hospitality, resulting in a dining experience that will gather guests around the table and spark meaningful connections.

 

“EMRE fills a much-needed gap in Paso Robles and the greater Central Coast,” shares Matt Kleefisch, general manager of The Ava Hotel. “We’re introducing something that feels fun and fresh and grounded in our region, but also inspired by the coastal cultures of around the world. It’s a place where you break bread, share stories, and discover something new each time you visit.”

 

“With EMRE, I wanted to create a concept that complements Paso Robles but also pushes it forward—offering a fresh experience for downtown in a space that feels vibrant, inviting, and just a little unexpected. It’s the kind of place I hope people return to again and again, whether they’re locals, here for a wine tasting weekend, or just passing through. CULINARY
Serving dinner and weekend brunch, live fire and fresh flavor take center stage at EMRE, with a menu inspired by Chef Julien Asseo’s French roots and global influences—particularly the shared, family-style dining traditions of regions such as North Africa, Greece, and coastal Spain. The food menu is both playful and refined, with Mediterranean-inspired flavors brought to life through Central Coast ingredients. Anchored by a custom-built open grill and a striking open kitchen, the experience is intended to be vibrant, social, and rooted in seasonality. The menu is comprised of shareable sides and large-format dishes designed to be passed around the table, with offerings like signature EMRE Souvlakis—large-format skewers featuring proteins and seasonal vegetables—alongside whole grilled fish, tomahawk steaks, and lamb racks, all touched by wood flame. A rotating lineup of bright, coastal-influenced starters—from roasted vegetables to fresh seafood and crudos—rounds out the “for the table” section, complete with desserts to end the meal that shift through the season, such as olive oil cake and sheep ricotta kadaifi.

 

BEVERAGE
The beverage program at EMRE is designed to complement the cuisine with both global sophistication and local charm. Upon arrival, guests are welcomed with a complimentary aperitif, with rotating options including both alcoholic and non-alcoholic selections themed across the Mediterranean. Meanwhile, the wine list features international bottles—including elegant offerings from Alsace, Champagne, and White Burgundy as well as regions in Greece, Israel, and Mexico—in addition to a curated rotation of local favorites from Central Coast producers. The beer selection includes several taps, with local names like Firestone Walker featured alongside Mediterranean imports. Both classic and Mediterranean-inspired cocktails—with some also available on tap, such as a signature Negroni—round out the beverage offerings.

 

DESIGN
By the talents of Sormeh Rienne, EMRE’s interiors reflect the same spirit of gathering and sense of place that define the dining experience. The space draws inspiration from sun-drenched Mediterranean villages and Paso’s pastoral charm, featuring hand-troweled plaster walls, dark-stained wood wainscoting, aged brass accents, and flowing drapery in warm oceanic tones. At the bar, a stunning installation of Fireclay Tile in hues of olive green, coastal blue, warm sand, and sunset glow creates a mosaic-like backdrop that shifts with the light throughout the day. Custom furnishings assorted ceramic tile accents, and strategically designed lighting add thoughtful artistry and texture to the space, while distressed oak floors and natural materials create a warm, relaxed atmosphere that encourages guests to linger and enjoy.

 

EXPERIENCES & COMMUNITY

EMRE is more than a restaurant—it will be a gathering place for Paso Robles locals and visitors alike. Named in homage to Yunus Emre, a famed Mediterranean folk poet and wandering philosopher, the concept is rooted in shared meals, soulful flavor, and hospitality that feels personal. In line with The Ava’s values, EMRE prioritizes local sourcing and sustainability, with kitchen practices focused on minimizing waste, including repurposing food scraps for stocks and sauces. Future seasonal experiences may include food and wine collaborations, inviting locals and travelers alike to explore the flavors of the region through a Mediterranean lens.
