Virgin Cheese Creator Holds Ditchin’ Dairy Demo At Vegas VegfestJodi Paige, the COO (Chief Cheese Officer) of Virgin Cheese, will present her Ditchin’ Dairy Demo for a festival crowd on Saturday, Sept. 29 at 11:45 a.m. at the 2018 Vegas VegFest, on the amphitheater stage at the Clark County Government Center. Paige will demonstrate how to blend thick cashew cream into coffee creamer, yogurt, cream cheese, sour cream and goat style chevre with a few simple ingredients, costing pennies on the dollar. VegFest, which runs 10 a.m.-6 p.m., and the demo are free.

With more and more consumers demanding healthier, sustainable and compassionate food sources, one Las Vegan woman is rising to the challenge. Artisanal cheese maker, Paige of Virgin Cheese, is at the helm of this movement locally in Las Vegas, producing traditionally cultured, organic, cashew-milk based cheeses worthy of fine dining. Paige will demonstrate how to make creamy, decadent dairy alternatives.

Whether lactose intolerant, paleo or preferring the plant-based lifestyle, folks are finding out the truth about dairy. Research continues to show 70-80 percent of the world population is lactose intolerant. “We are just used to feeling bad!” said Paige. “Now, unfortunately, we are also used to getting sick.” The growing rates of childhood obesity, heart disease, high cholesterol and cancer have people taking more control of their eating habits and leaning towards organic fruits and vegetables. As the plant-based community grows worldwide, people now realize it is easier to give up meat, than cheese.
