Legendary Chef and Restaurateur Wolfgang Puck is once again transforming the expected into something entirely new. On February 9th, Puck will open CARAMÁ at Mandalay Bay Resort and Casino. His newest fine dining experience honors his mother Maria, savors the taste of tradition and delivers anticipatory hospitality with surprises at every turn.

Inspired by a vintage photo of Wolfgang and Maria in their Austrian garden, Puck honors her with a letter that will be printed on the back of every menu, and a culinary journey sure to touch the heart and soul of every guest. “My mother was a chef, and living so close to the Italian border, she was influenced by the culture and food of Northern Italy. Our meals were always simple, and fresh, right from the garden,” says Puck.

The 6,500 square-foot restaurant was designed by Italian designer Denis Frison, who drew inspiration from his love for Milan, Italy and the city’s famed Galleria del Duomo. Guests will feel as if they have been taken on a journey through the streets of this magnificent city with beautifully detailed tiles, marble, brass and wood finishes. Overhead, the space is illuminated with a variety of striking custom-designed brass light fixtures and chandeliers.

Upon entrance, guests will be welcomed by a stunning 49-foot-long bar, where an arched canopy is complemented by a backdrop of mirrors and an intricate wallpaper depicting flowers from a beautiful Italian garden. In the center, an iconic Salumeria, inspired by an historical shop in the Via Montenapoleone, will be filled with imported meats and cheeses – the perfect place to enjoy an aperitivo before dinner. Discerning wine lovers will marvel at Wolfgang’s cellar featuring over 7,000 bottles, including carefully curated rare Italian wines. Continuing through the main restaurant into “the parlor,” guests will discover an open pizza oven, detailed with beautiful tile.

For dinner, guests can begin with Carpaccio di Manzo with Arugula Lemon Aioli, or Insalata di Mara, featuring Lobster, Shrimp, Mussels & Octopus. For the pasta course, the choices are seemingly endless: Linguine alle Vongole with Razor Clams and Oregano; or a classic favorite Rigatoni All’ Amatriciana with Guanciale. The Alla Griglia includes Pollo all Brace Diavola with CARAMÁ spice blend, while the Bistecca Alla Fiorentina is served with Salsa Verde Toscana. An after-dinner treat of Puck’s signature WP Noir Reserve Chocolate Crema Gelato from the Gelato Cart is a perfect finish to an extraordinary dinner.
