FORT LAUDERDALE, FLA — (JULY 9, 2025) – Burlock Coast Seafare & Spirits, the scenic waterfront restaurant at The Ritz-Carlton, Fort Lauderdale, proudly announces the launch of Adrienne’s Food Diaries, the latest installment of its acclaimed culinary series. Originally introduced by Chef Paula DiSilva, the program now continues under the leadership of Executive Chef Adrienne Grenier. From August through November, guests will experience an exclusive rotation of signature dishes from four renowned chefs, each paired with a custom cocktail and a story of personal inspiration.
August: Chef Dean Max — Glazed Black Grouper
Kicking off the series in August is celebrated chef Dean Max, presenting his Glazed Black Grouper ($52) from August 1 – 31. The buttery grouper filet is perfectly cooked, glazed with umami-rich miso, and served with Thai sweet rice, baby eggplant, bok choy, and a coconut curry sauce. A pioneer in the farm-to-table movement and president of DJM Restaurants, Chef Dean Max brings decades of experience and a deep connection to the Ritz-Carlton brand and South Florida dining.
September: Chef Pushkar Marathe — Pachadi Salad
In September, Chef Pushkar Marathe infuses the menu with vibrant Indian flavors through his Pachadi Salad ($19), available September 1 – 30. This dish is a feast for the senses, featuring fresh shaved carrots, grated cauliflower, yellow wax beans, cherry tomatoes, watermelon radish, kale, roasted peanuts, and a turmeric vinaigrette. Known for Stage Kitchen & Bar and Ela Curry & Cocktails, Chef Marathe blends Indian heritage with international techniques acquired across the Caribbean and Middle East.
October: Chef José Mendín — Butterscotch Miso Pork Belly
October brings a rich and savory experience with Chef José Mendín’s Butterscotch Miso Pork Belly ($25). A five-time James Beard Award semifinalist, Chef Mendín serves up confit pork belly topped with salted corn nuts and plated over butternut squash purée and roasted bok choy. His influence spans concepts like Pubbelly Sushi and La Placita, making him a driving force in reshaping Miami’s culinary scene.
November: Chef Giorgio Rapicavoli — Muhammara Dip
Closing the series in November, Chef Giorgio Rapicavoli presents a bold Muhammara Dip ($17) — a luscious blend of roasted red peppers, hazelnuts, sundried tomatoes, balsamic glaze, and za’atar, served with grilled flatbread. Known for Eating House and Luca Osteria, Rapicavoli’s globally inspired, unconventional style has earned him a Chopped championship and multiple James Beard nods.
