Matt and his wife, Erenia Lara, have spent nearly a year preparing the locally loved brand for expansion in key markets, including Nevada, Colorado, Texas and New Mexico. And while the prep has them excited, the Pools are never ones to get ahead of themselves. The couple is considering expansion options that range from only one new location to as many as 10.

“It’s all about creating real chemistry with the right people, place and neighborhood,” said Matt. “This is what guides our growth, and this is what keeps our brand operations consistent and successful.”

The “Why” Behind the Growth

“We get inquiries from investors weekly who are looking to join in,” said Pool. “But honestly, we’ve just kept our focus on serving an incredible meal, one plate at a time . . . until now.”

The idea for measured, continued growth arose from the success of the brand’s first partnered location. In 2014, Matt’s Big Breakfast opened in Phoenix’s Sky Harbor International Airport, where Pool’s team is responsible for training staff members employed by SSP America and maintaining a consistent experience that mirrors that found at all other locations of the restaurant.

“It worked, and it proved that we could take the right steps to manage this type of growth while keeping our company culture and integrity intact,” said Pool.

Since opening its Phoenix Sky Harbor International Airport location, Matt’s Big Breakfast has earned national recognition as the top 2017 “Best Chef-Driven, Local or Regional Restaurant” from Airport Revenue News for its commitment to from-scratch cooking and homestyle hospitality.

The National Search
With the prep work done and the paperwork filed, the Pools are now looking to speak with experienced and passionate operators in Nevada, Colorado, Texas, New Mexico and other markets in need of a killer breakfast joint with a cause. Top candidates will share a mutual dislike of freezers and microwaves, both of which are absent at all Matt’s locations.
