Try these easy and delicious Gayo Azul ideas for Spring!
Breakfast? Lunch? Dinner? Gayo Azul Stuffed Sweet Potatoes are perfect for any meal or celebration.
- 4 sweet potatoes
- 15 oz can of black beans
- 1 bag of frozen roasted corn
- ½ cup diced yellow onion
- Gayo Azul Queso Blanco Crumbles
- 3 green onions
- 2 tbsp taco seasoning
- ½ cup pickled red onion (optional)
- 1 jalapeno (sliced)
- Sour cream (optional)
- Salt and pepper
Cut sweet potatoes in half. Season with salt, pepper, and olive oil. Bake sweet potatoes at 400 degrees for approximately 40 minutes, or until tender. Sautee black beans, corn, and yellow onion with taco seasoning and a bit of olive oil until heated through. Top sweet potatoes with black bean mixture. Garnish with pickled red onion (optional), jalapeno, sour cream, cilantro, and Queso Blanco crumbles.

- 4 Eggs
- Salt and Pepper to Taste
- Queso Blanco Crumbles
Heat the oven to 425. Slice the avocados in half, lengthwise, and twist to separate. Remove the pit and scoop out 1-1.5 tablespoons of avocado, creating a larger cavity. Place the avocado halves in a baking dish to keep them upright, and gently crack one egg on top of each half. Bake for 15-20 minutes. Sprinkle with salt and pepper and add toppings.
