Chatham Bars Inn Presents New Summer Menus Highlighting Oysters, Lobsters and Farm-Fresh Fare CHATHAM, Mass. – July 29, 2015 – Cape Cod’s historic Chatham Bars Inn is shucking up a storm this summer to present guests with the freshest fare from local Cape waters and the resort’s own eight-acre farm. By summer’s end, the culinary team will have shucked as many as 60,000 oysters and served 1,250 lobsters at dining outlets from the signature restaurant STARS to the casual, sand’s-edge The Beach House.

STARS

Shellfish are the stars of the restaurant’s summer appetizers, from Chatham oysters with melon, pickled cucumber pears and champagne mignonette; to jumbo lump crab cake with Old Bay power, celery and Tabasco vinaigrette; to lobster bisque with lobster mousse, cardinal foam and mini popover. Other starters come straight from the farm, including a simple but show-stopping dish of Chatham Bars Inn Farm tomatoes with 13-year-old balsamic vinegar, Chatham salt, and Great Hill blue cheese. Foie gras torchon gets a summer dressing of peach compote, pickled watermelon rind and brioche.

Peaches also make an appearance among the entrées as an accompaniment to lavender and honey glazed Rohen duck breast with fennel and potato puree. Other entrée highlights include pan-roasted scallops with summer corn, roasted Chanterelle mushrooms, russet crisp, summer nage, and baby turnips; and butter poached Chatham lobster served with olive citrus cake, asparagus puree, fermented garlic, and an orange tarragon emulsion.

The Veranda

Among the summer highlights of the Veranda’s light-fare dinner is an array of chilled seafood, including local oysters, littleneck clams, poached lobster, poached jumbo shrimp, Hamachi sashimi, crudo and Hackleback-American sturgeon caviar. Lobster can also be found in a flatbread with artichoke, ricotta, farm tomato, and kale pesto, and, on the lunch menu, in crab and lobster sliders; tacos topped with cucumber radish, sweet chili, and avocado; and a classic lobster roll.

Showcasing the summer farm harvest are a grilled peach and goat cheese flat bread with pistachios, sunflower sprouts, and white truffle honey; and a CBI farmers provisions shared plate of carrot and ginger tartar, kale and walnut pesto, roasted tomato and basil compote, and grilled country bread. Meat lovers can savor short rib sliders with onion jam and house-made pickles.

The Beach House

Just inches from Chatham Bars Inn’s private stretch of sand, The Beach House and its Bar feature a raw bar as well as clam shack classics from clam chowder and Chatham steamers to fish & chips and lobster roll. In the summer spotlight are a tomato and watermelon gazpacho and a “local catch” salad of seafood caught from the neighboring Chatham Fish Pier and served over baby farm lettuce, heirloom tomatoes, and a citrus vinaigrette. Rounding out the menu are the popular Beach House burger, swordfish tacos, and a lobster BLT with warm lobster meat, lemon tarragon butter, local bacon, Bibb lettuce, farm tomato, and avocado.

Fresh summer berries are featured in a selection of signature cocktails at The Beach House bar. They include a Nauset Cooler with Tanqueray, lime, mint, sugar, strawberries and soda water; Cape Rose Sangria with Lillet Rose, SOHO lychee, guava, lime, ginger syrup, and seasonal berries; and North Beach lemonade with Ketel One Citroen, lemonade, and raspberries.
