COOK HALL SET TO DEBUT IN DALLAS ON OCTOBER 30

Modern American Gastropub Cook Hall to Open at W Dallas – Victory

DALLAS (October 25, 2012) – For months, downtown Dallas has been abuzz with excitement about Cook Hall, the brand new restaurant that’s set to open at the W Dallas- Victory. The wait is finally over as Cook Hall prepares to open its doors to guests on Tuesday, October 30.

Culinary Concepts Hospitality Group (CCHG) has conceived Cook Hall to be a unique and modern take on an American gastropub, serving as the primary public food and beverage space and center of activity of the hotel. A bar-centric food hall where handcrafted cocktails are stirred, brews are drawn and small plates are passed, encouraging guests to share and engage. Cook Hall features regional American fare comprised of familiar comfort foods, updated for the modern diner’s palate “Cook Hall was designed around changing dining preferences,” said James Gersten, president of Culinary Concepts Hospitality Group, the creative and strategic force behind Cook

Hall. “People are dining out more frequently and are looking for great value, food, service and a comfortable environment. They don’t want the pressure of ordering a bottle of wine at each meal or three courses. It’s just not how we dine anymore.”

It is with those diners in mind that veteran Dallas chef Rick Graff and CCHG’s culinary team introduce a playful and ambitious menu of regional American dishes updated with quality local ingredients and modern technique. Highlights of the 30-item menu include duck tacos, pimento mac and cheese and cornbread glazed with brown sugar and bacon. Cook Hall will be open for breakfast, lunch, dinner and everything in-between to refresh and revive locals and travelers alike.

“The W brand is known for being cutting edge and always striving to deliver What’s New, What’s Next,” said Darryl Jett, general manager for W Dallas-Victory hotel. “W Dallas-Victory furthers that model with the launch of the brand-new restaurant concept, Cook Hall, to give our guests a fresh and fun dining experience. We invite all of our guests and Metroplex residents to discover ‘What’s New, What’s Next’ at Cook Hall.”

Cook Hall will also update the idea of a “gastropub” by introducing one of the most exciting new bar programs in Dallas, if not the country. Under the supervision of James Beard Award-winning beverage director Belinda Chang, Cook Hall boasts carefully selected draft beers and boutique wines. Seasonal, handcrafted cocktails are created by expert mixologists or by the guests themselves when the signature Cook Hall Cocktail Kit is presented tableside. Designed to be a welcoming gathering place, Cook Hall will incorporate a mix of “found objects” in an expressive range of warm colors and textures. The décor blends invitingly

distressed wood paneling with metals and comfortable seating to create an overall “rustic simplicity” aesthetic and create a warm and inviting space for guests to relax and share. Located across the street from the AT&T Plaza at American Airlines Center, Cook Hall reflects the social nature of the concerts, games and events taking place nearby. Dallas marks the debut of the Cook Hall concept, which is set to expand into Atlanta later in November, 2012.
