Grand Hyatt Baha Mar Announces The Opening Of Shuang BaShuang Ba, an ultra-luxe restaurant poised to offer the highest quality and most authentic Chinese dining experience in The Bahamas, opens December 8 at Baha Mar Resort.

Culinary

As the crown jewel of Grand Hyatt Baha Mar’s culinary offerings, chefs will utilize the finest ingredients in creating a new Chinese haute cuisine. Diners will experience an unprecedented menu of flavors that meld traditional and contemporary. Signature dishes include: “Cherry” foie gras; Traditional Peking duck; Braised “black-gold” abalone; Fragrant iberico pork with preserved tofu, wrapped with crepes; Chaozhou style truffle & vegetable dumplings; and Steamed imperial bird’s nest, crystal sugar in orange

Seafood specialties will be prepared using locally sourced fresh catches including lobsters, crab, abalone and conch, and housed in four aquariums in which guests can personally select their entrée. Kitchens will feature specialized imported equipment, such as duck roasters and state-of-the-art steamers. Libations include a selection of Baijiu, a highly regarded Chinese liquor that are bottled in beautifully designed and decorated glass vessels. Traditional Eastern and Western tastes converge with Chinese five spice-infused cocktails that incorporate house-made syrups; the Double Dragon will feature dragon fruits, and the Far East Fashioned is inspired by the traditional cocktail, the Old Fashioned.

Executive Chef Brent Martin hand-selected a talented team of 15 renowned chefs, all of whom hail from China’s most esteemed hotels including Park Hyatt Beijing, Four Seasons Beijing, Shangri La Shenzhen and Wynn Palace Macau. Offering a level of authenticity rivaled by none, each chef has specialized in a limited practice throughout their career to achieve culinary perfection. Merging international culinary practices with local customs, the restaurant’s Chinese chefs will work closely with Bahamian talent to foster the seamless integration of two cultures rooted in passion and inspired by exquisite cuisine. Design

Symbols of double, which translate to good fortune in Chinese culture, permeate the restaurant’s design. Shuang Ba, meaning, “double eight,” signifies prosperity and wealth; far from coincidence, there are 88 seats in the restaurant and 88 items on the menu. In traditional fashion, hues of deep red accompany dark woods and metal furnishings, along with ornate statues appearing in double. Many of the restaurant’s serving carts, trays and bureaus were purchased at antique auctions. The focal point of the dining room is a 15-ton marble pillar of two intertwined dragons, which represent reverence for the emperor, wealth and heritage. Four hand-woven silk tapestries in each corner of the dining room feature artisan detailing of a Chinese carp pond and water lilies, iris flowers, a bamboo grove and Chinese plum blossoms. These represent abundance in life, elegance and prosperity. Furthermore, four private dining rooms are decorated with symbols of the phoenix and dragon, among other mystical creatures representative of good fortune, endless wealth and yin and yang. Each dining room features a hidden private bathroom; a design characteristic that propels the experience of luxury and allure.
