Internationally known Chef Grant MacPherson’s career spans five continents, four decades, and some of the world’s most iconic and celebrated dining and hospitality destinations. This past Saturday, MacPherson had the great pleasure of cooking a gourmet meal at Columbus, OH’s Jerome Schottenstein Center prior to Michael Bublé’s performance. In attendance were Bublé and his special guests – the auction winners of this year’s Celebrity Fight Night charity event.
Both Bublé and MacPherson are supporters of Celebrity Fight Night, one of the nation’s most impactful charity events held each year in honor of featured guest Muhammad Ali. At this year’s 20th Anniversary auction, held April 12 at JW Marriott Desert Ridge Resort & Spa in Phoenix, AZ, guests had the chance to bid on a live auction package to enjoy a private dinner with Bublé cooked by Chef MacPherson.
For the event, Chef MacPherson chose a seasonal menu with ingredients sourced from Columbus’ local Star Market farmer’s market. On the menu was a farmer’s caprese salad with hand-selected Abe Lincoln heirloom tomatoes, burrata cheese, bush basil and extra virgin olive oil; marinated roasted 21 spice quail accompanied with white beans, wilted spinach, cured meyer lemon and natural jús; and for dessert, summer fruits of black mission figs, wild berries, and Alan Parsons farmed passion fruit.
A native Scotsman who grew up in Johannesburg, South Africa and Alberta, Canada, Chef MacPherson began his start at a southern Ontario, Canada restaurant more than 30 years ago. MacPherson has cooked adventurous five-star food, developed menus, designed and run kitchens, and built top-notch teams at iconic places including Raffles Hotel—the legendary “Grand Old Lady of Singapore; Bellagio Las Vegas; Wynn Las Vegas; Wynn Macau, Regent Hotels in Sydney, Kuala Lumpur, and Singapore; Four Seasons Hotels in Toronto, Vancouver, and London, England; Ritz Carlton Big Island of Hawaii, and Sandy Lane Hotel in Barbados.
