New cookbook from Hirut Campbell explores Ethiopian dishesIn a society filled with cheap, Americanized versions of international cuisine, it can be difficult to find traditional ethnic foods. Hirut Campbell wanted to help spread her culture to others by teaching them how to make their own traditional meals. In “Traditional Ethiopian Cuisine” (published by Xlibris), Campbell helps readers experience her homeland’s culture and cuisine.

Campbell’s book is dedicated to her mother, who instilled in her “the reverence for all things natural and the unique culture and cuisine of Ethiopia.”As revealed throughout the book, many Ethiopian dishes contain natural and organic foods, including foods native to the region. Campbell retains the cultural identity of the meals by referring to the meals by their traditional Ethiopian name as well as many of the ingredients. For example, clarified butter, or “yekelte kiba,” is used in many recipes. The cuisine itself is unique in its combination of unexpected flavors, such as veal with clarified butter, lamb with turmeric sauce and sardines with shrimp.

The daughter of a farmer and a restaurateur, Campbell grew up surrounded by traditional cuisine and natural ingredients. An unwritten law in Ethiopian culture states that any guest should be treated to meals as if they were family. The responsibility of preparing these meals for visitors often fell upon Campbell. In addition, she often prepared meals for her nine siblings and her parents. She has taken that experience and compiled it into this comprehensive guide to traditional dishes, vegetables and spices.

About the Author
Hirut Campbell was born and raised in Ethiopia. She attained U.S. citizenship in 1980, completed a degree in accounting and began working in Silicon Valley. In 1989, she married an American physicist and raised two children. From 1997 through 2001, she ran a successful café in San Jose, Calif.
