New Fast Casual Eatery Two forksNew York, NY – Two forks, a new fast casual eatery with a focus on slow cooking and seasonal fresh produce, brings a new kind of dining to midtown Manhattan beginning today, January 19, 2017.  The brainchild of Chelsea Hospitality Group’s Dave Oz (Bathtub Gin) and Chef Michael Kaplan in conjunction with HPH, Two forks will highlight clean eating with a menu that is always cooked slow and pulled fast.

Located just steps away from Bryant Park, the new fast casual eatery pairs all natural, slow cooked meats with seasonal slaws and globally inspired sauces.  The Two forks approach to food is simple: clean, responsible and always fresh, featuring hand cut slaws and small batch sauces prepped in-house daily, along with tender, shredded meats and vegetables.  Offering a health-conscious approach to dining, Two forks doesn’t use high temperatures to cook. Everything is prepared gently at low temperatures in a moisture-induced environment, reducing exposure to carcinogenic causing elements.

“At Two forks, we love the pairing of tender, juicy meats with crisp, refreshing slaws,” said Kaplan. “The slow coking really allows the natural flavor of the products to shine.”

Two forks’ menu features a variety of combinations in the form of bowls or buns (sandwich), changing seasonally.  Guests will first choose between a bun or bowl, and then select a pulled meat (Niman Ranch Grass Fed Beef, Amish Chicken, Niman Ranch Pork, Colorado Lamb) or veggie option (Organic Spaghetti Squash).  Next, guests will select slaws and sauces, which will change based on the availability of sustainable and locally sourced produce. Additionally, guests can pick up signature bowls and buns, including Hot Chick (pulled chicken, harissa buffalo sauce, carrot, celery root, parsnip, blue cheese slaw), Squash Goals (pulled spaghetti squash, tzatzki sauce, butternut squash, carrot, apple, cranberry, goat cheese slaw), Noah’s Arc (pulled beef, chicken, pork and lamb, spicy Oz, cabbage, carrot, scallion slaw), amongst others. The menu also features fresh pressed juices, gluten free and vegan snacks baked with fresh shredded vegetables, and grab-on-the-go versions of the hand-cut slaws and specialty chicken salads.

The 1,800 square foot eatery features 38 seats within various seating areas to cater to diners’ needs: online ordering and counter pick-up for those looking to grab a quick bite, tables for those with more time to spare, and an upstairs mezzanine for those who want to get comfortable and take a break from the midtown bustle.  Designed by WCA Architects, the décor features reclaimed pine wood contrasted with stainless steel and white subway tile, tied together with clean polished concrete floors and rough boardform concrete counter wrap.

Located on West 40th Street between 6th Avenue and Broadway, Two fork aims to bring clean eating and the benefits of slow cooking to the heart of one of the country’s busiest neighborhoods.
