The Maker Hotel in Hudson Introduces New Italian Menus with New Executive Chef

Opened in 2020 by Lev Glazman and Alina Roytberg (the co-founders of global beauty sensation Fresh), The Maker Hotel quickly became a popular destination for locals and global travel enthusiasts alike. Honored on Travel + Leisure’s 2021 It List, Conde Nast Traveler’s 2021 Hot List, Departures’ 2021 Legend Awards and Architectural Digest’s 2021 Hotel Awards, the intimate 11-room property, known for its lauded Maker Studios, celebrates the world of all makers.

The Maker Hotel Introduces New Italian Menus with Executive Chef

Offering gathering places for every occasion, The Maker’s three eateries capture the property’s creative, community-driven ethos. Chef Alex brings a rejuvenated energy to the culinary programs, with a special focus on The Maker Restaurant. Chef Alex’s Italian-inspired menu uses regional cooking techniques and highlights dishes that are naturally guided by the seasons, and celebrates the bounty of the Hudson Valley and the close proximity to local farmers and culinary artisans of all kinds.

THE EATERIES
The Maker Restaurant is a celebration of Chef Alex’s upstate Italian cuisine. Housed in a glass conservatory enveloped by layers of greenery, the restaurant celebrates the simplicity of high quality local ingredients. The new menu includes dishes like Market Crudo with red grapefruit, pink peppercorn and first pressed olive oil; Bucatini Cacio e Pepe with pecorino and peppercorns; Hand Cut Tagliatelle with white lamb ragu and pecorino romano; Gemelli with early Spring pesto, toasted almonds and ricotta salata; Heritage Chicken with local potatoes, salsa verde and caramelized lemon; among others.

Inspired by the high-energy bistros of Europe, The Maker Café is a sundrenched, bustling, all-day restaurant perfect for every occasion – from grabbing a quick cup of coffee and breakfast pastry, to catching up with friends over a leisurely happy hour-turned late night dinner. While the daytime menu includes classics like the Breakfast Sandwich with a fried egg, cheddar and sausage or bacon, Slow Roasted Pork Shoulder Sandwich with marinated broccoli rabe, provolone, fennel seed aioli; and Farro Salad with seasonal vegetables and cider vinaigrette, The Café in the evening will re-launch as an Osteria in May.

The Maker Lounge is an intimate cocktail bar housed in a converted 19th Century Carriage House. This Spring, the Lounge brings back their popular menu inspired by The Maker Fragrances, a collection with six gender-inclusive scents – Fire, Libertine, Naked, Wild, Paradiso and Stag (awarded Indie Fragrance of the Year from Fragrance Foundation). Cocktails include, Fire with Scarlet Ibis Trinidad Rum, Fords Gin, Kronan Punsch and Giffard Madagascar Vanilla Liqueur; Libertine with Fred Jervis Fernet, ln Mattei Cap Corse Blanc, dried hibiscus and rose, rose water and lemon; Naked with Plymouth Gin, Chareau Aloe Liqueur, Tangerine Cordial, pink peppercorn and carrot; Paradiso with Derrumbes Mezcal, Cimarron Reposado, Liquore Delle Sirene Falernum, passion fruit, grilled pineapple and lime; among others.

ABOUT CHEF ALEX NAPOLITANO

Hailing from an Italian-American family, Alex developed an affinity for cooking from a young age. Working in kitchens throughout highschool and college, Alex spent the years after college traveling through Italy, and ended up working at Michelin-starred Vicolo Santa Lucia in Romagna. In 2010, he moved to New York City and has since spent time working in acclaimed kitchens throughout the city, including Michelin-starred A Voce Madison, Charlie Bird, Paul Liebrandt’s The Elm and Rubirosa Ristorante. In 2018, he moved to the Hudson Valley and spent years working at Escape Hospitality, overseeing the culinary program at Scribner’s Lodge and Fellow Mountain Cafe. Now, he’s thrilled to bring his personal experience and love for Italian cuisine to The Maker Hotel.
