A Taste of Curitiba with Manu Buffara – July 19th & 20th
Manu Buffara, Executive Chef and Owner of Manu in Curitiba, Brazil, is renowned for her innovative tasting menu, honored by the World’s 50 Best. Passionate about her region’s culture and produce, Chef Buffara champions sustainabilit, sourcing organic ingredients from local suppliers and her own garden. Manu epitomizes culinary innovation while staying rooted in the rich flavors of Paraná. Sustainabilit is a core
value for Chef Buffara, which is reflected in her tasting menu featuring 60% plant-based dishes.

An Endless Thai Summer with Hong Thaimee – September 13th & 14th
Originally from Chiangmai, Thailand, Chef Hong Thaimee has become a prominent figure known for introducing Thai cuisine and culture to the United States. Having honed her skills at restaurants like JeanGeorges Vongerichten’s Spice Market and Perry Street, she founded Ngam in New York Cit’s East Village in 2012, where she showcased the authentic Thai flavors of her childhood. In 2023, Chef Thaimee refocused her career and mission launching her direct-to-consumer product, thaimee, aimed at bringing the essence of Thai cuisine into home kitchens. Chef Thaimee’s experience at The St. Regis Bahia Beach Beach Resort will include a Thai-inspired tasting menu featuring cocktail pairings with each dish.

Tasting the Stars with Alex Dilling – November 22nd & 23rd
Born in London but raised in the United States, Alex Dilling is the chef and owner of Alex Dilling at Café Royal in London. With a career spanning over to decades in Michelin-starred kitchens across Europe, Dilling has mastered the art of contemporary fine dining. At his eponymous restaurant, he showcases his modern interpretation of traditional French gastronomic cuisine. Chef Dilling’s experience at The St. Regis Bahia Beach Resort will feature an elevated and exciting menu with a Grower Champagne pairing
experience. Ideally located on a former coconut plantation and situated beteen the El Yunque National Forest and Espíritu Santo River State Preserve, The St. Regis Bahia Beach Resort is set on 483 pristine acres. The St. Regis Bahia Beach Resort offers 139 guest rooms and suites, each featuring private terraces with breathtaking ocean and garden views.
