50 Eggs, Inc. announces the expansion of its restaurant empire with the second iteration of Spring Chicken
50 Eggs, Inc. announces today the expansion of Spring Chicken, the fast casual complement to the South Beach and Las Vegas sensation, Yardbird Southern Table & Bar. Following the explosive popularity of the first Spring Chicken in Coral Gables, the second of four planned locations will open on June 10th in Fort Lauderdale. The opening marks the restaurant’s first location in Broward County. Spring Chicken infuses the farm fresh qualities of homestyle, comfort cooking with a casual, laid back environment.
John Kunkel, CEO & Founder of 50 Eggs, Inc., who created the fast-casual chain Lime Fresh Mexican Grill, Swine Southern Table and Bar, and the award-winning Yardbird Southern Table and Bar, is excited to expand upon the concept of Southern-inspired cuisine. The opening of Spring Chicken in Fort Lauderdale is the first step in the new chain’s expansion plans. The second iteration of this particular fast casual concept is 50 Eggs’ only current venture outside of the Miami-Dade area, with openings in Miami Beach and Miami International Airport to follow in the coming year.
“The expansion of Spring Chicken Fort Lauderdale is a much anticipated return back to Broward County,” says Kunkel. “Lime Fresh Mexican Grill was my last venture north and I am excited to share another fast casual concept with our loyal Broward County patrons. With the popularity of Yardbird, we are happy to provide individuals an alternative to a more approachable cuisine while still incorporating our high quality food, made fresh, fast and at a great value,” continues Kunkel.
The menu will be reflective of the original Spring Chicken menu, borrowing several popular Yardbird dishes including the award-winning fried chicken. The original chicken recipes, created by Lewellyn, Kunkel’s grandmother, have made Yardbird a James Beard Foundation Semi-finalist for “Best New Restaurant”, a Bon Appétit “Top 50 Best New Restaurant in the U.S.” and Food and Wine’s “Best Fried Chicken and Waffles in the U.S.” Menu highlights include Lewellyn’s Famous Blue Plate Specials, Family Meals and Mama’s Biscuits which are baked fresh daily. Popular sandwiches such as The Yardbird (the classic, crispy marinated chicken thigh with house butter pickles, Southern sauce served on a toasted potato bun) and the Backyard BBQ (pulled smoked chicken breast with housemade BBQ sauce, house pickles, crispy onion strings topped with housemade coleslaw) will remain menu staples.
Similar to the design at Coral Gables, the design of Spring Chicken Fort Lauderdale merges an urban, industrial aesthetic with distinct rural Southern influences. Yardbird’s synonymous white brick walls adorned with the classic multi-colored mason jars are incorporated in the space along with reclaimed red woods with white
washed finishes. Country white wood chairs surrounding communal picnic-style tables with butcher-block tops and contemporary worn-in brown and cobalt leather sofas all inspire a little Southern soul. The dining room uniquely infuses a color palette of white and gray with pops of red, yellow and cobalt, lending to a fresh and vivid atmosphere guaranteed to soothe and entice guests.
