Cheeca Lodge & Spa Appoints Two Chefs to Food and Beverage Team

Cheeca Lodge & Spa, leading luxury resort in the Florida Keys, is delighted to announce the appointment of Alex Beaumont and Patrick Cleary as new Executive Chefs to Cheeca Lodge & Spa. The resort’s culinary program includes five beloved restaurants – Atlantic’s Edge, Mia Cucina, Nikai Sushi Bar and Restaurant, Morada Bay Beach Café and Pierre’s.

Alex Beaumont joins the Cheeca team with an extensive background in hospitality that spans over 25 years with leading companies including Marriott and Waldorf Astoria. Beaumont is a five-time winner of the Key West Master Chef competition and holds training in classic French cuisine with depth knowledge of western styles. Before joining the Cheeca team, Beaumont served as Complex Executive Chef at Casa Marina & Reach Resort Waldorf Astoria in Key West, Florida. In his role at Cheeca, Beaumont will oversee the management and kitchen at the resort’s in-house dining, Atlantic’s Edge, Mia Cucina, and Nikai Sushi Bar & Restaurant.

At Cheeca’s signature restaurant, Atlantic’s Edge, Chef Beaumont will continue to expand the menu with help from its surrounding marine environment with fresh fish catches and local ingredients rotated with the seasons.

Chef Patrick Cleary joins Cheeca with 17 years of experience in hospitality with leading companies including Hilton, Hyatt, and Waldorf Astoria. His expertise spans through a variety of roles in managing a diverse portfolio of kitchens, including large convention hotels to historic and iconic resorts. Before joining the Cheeca team, Cleary served as Executive Chef at the Hilton Denver City Center in Denver, Colorado. In his role at Cheeca, Cleary will oversee the management and kitchens at the recently acquired Morada Bay Beach Café, and Pierre’s. With the addition of Chef Cleary, Pierre’s will showcase its unique fusion of coastal French cuisine blended with influences of its picturesque bayside region. At Morada Bay Beach Café, Chef Cleary will continue to fuse Mediterranean flavors with hints of the Caribbean, offering diners delectable dishes that embody Cheeca’s island paradise. Chef Cleary will use these kitchens to create unique flavor combinations and new dishes to debut to the 214-guestroom historic resort.

“We are thrilled to be bringing two new members with such skill and respected talent to the team here at Cheeca Lodge & Spa,” said Paul Scott, General Manager of Cheeca Lodge & Spa. “As we grow our culinary offerings this year, we are confident that the experience and seasoned backgrounds of both Alex and Patrick, will create a dining experience unlike any other in the Florida Keys.”

Earlier this year, Cheeca Lodge & Spa acquired Islamorada restaurants Pierre’s and Morada Bay Beach Café, favorites among locals and visitors, along with 10 private villas, called The Casitas at Cheeca Lodge. Adding to the resort’s existing 214 guestrooms and suites, The Casitas offer the most privacy and exclusivity of all room categories. These additions add to many upgrades made by the historic resort in 2020, including a new oceanfront pool and adjacent Tiki Bar, named 25 South.
