Departure Portland Welcomes Executive Chef Dan Herget

PORTLAND, Ore., June 18, 2025 – Departure, the picturesque and acclaimed rooftop restaurant perched atop the Nines Hotel in Downtown Portland, announces today the appointment of Chef Dan Herget as Executive Chef. With an extensive background in innovative, globally inspired cuisine, Chef Herget brings fresh energy and vision to Departure, introducing a refreshed dining experience that celebrates the spirit of izakaya, a lively and communal style of eating rooted in share plates and bold flavors. His new menu is inspired by the vibrant cuisines of Southeast Asia and Japan brought to life through the bounty of the Pacific Northwest.

A Proven Culinary Leader with Coast-to-Coast Experience

A graduate of Johnson & Wales University’s Miami campus with dual degrees in Culinary Arts and Pastry Arts, Chef Herget’s career has spanned some of the country’s most exciting culinary cities. He trained under Jean-Georges protégé Marco Ferraro at Wish in Miami Beach, served as Executive Chef for the Otaku Group in Nashville, and helped launch the Noelle Hotel in Nashville as a culinary destination. Most recently, he led kitchen operations at The Standard Spa in Miami Beach and Perry Lane Hotel in Savannah, Georgia.

  • Binchōtan Grilling: Seasonal seafood, vegetables, and steaks grilled over Japanese binchōtan coals.
  • Wok-Fired Dishes: Elevated fried rice and Sichuan-inspired potatoes with black truffle.
  • Seasonal House Specialties: Including Koshihikari tots, bacon fried rice with pineapple, and pan roasted chicken with spring pea salad.
