New Food and Beverage Team Debuts Fresh, Modern Flavors at 3800 Ocean Restaurant & Lounge

Palm Beach Marriott Singer Island Beach Resort & Spa has appointed two new directors and an executive sous chef to the food and beverage team at 3800 Ocean Restaurant & Lounge, where they have already introduced an array of new, modern dishes to the menu.

The resort tapped hospitality maestro Michael Guirgis to serve as the food and beverage director, and culinary expert Bill Prante to serve as the assistant food and beverage director. Accomplished private chef Andrew Rockerman joins 3800 Ocean as the new executive sous chef, working alongside executive chef Jeffrey Armusik to bring an updated contemporary twist to the restaurant’s American fare.

A New York native, Guirgis brings more than 20 years of experience in hotel management, business operations, and guest services to the resort’s oceanfront restaurant. He most recently served as the general manager of the DoubleTree by Hilton in Norwalk, Conn., from 2018 to 2022. Before that, Guirgis oversaw multiple operations in Danbury, Conn., and Port Jefferson, N.Y., as the general manager and regional director of food and beverage for The Matrix Group from 2009 to 2018. Earlier in his career, Guirgis worked as a food and beverage director for various Hilton hotel properties, including Hilton West Palm Beach Airport, Hilton Tampa Airport Westshore, and Hilton Singer Island Oceanfront/Palm Beaches Resort.

Prante brings 20 years of leadership experience from various restaurants, hotels, and country clubs in South Florida. Before joining the hospitality industry, Prante served in the U.S. Navy as the executive assistant and office manager to the Commander-in-Chief of the U.S. Pacific Fleet from 1991 to 1995. He started a career in the hospitality industry in 2002 as general manager of the former Max’s Beach Place in Fort Lauderdale, Fla. Most recently, Prante served as the food and beverage director for The Ambassador Hotel in Palm Beach, Fla., from 2020 to 2022. Before that, he worked as food and beverage director for The Legacy Golf & Tennis Club from 2018 to 2020 in Port St. Lucie, Fla.

Rockerman is a Miami native who brings 14 years of culinary experience to 3800 Ocean. His pedigree is prestigious, graduating from the famous Culinary Institute of America in 2009 and working with celebrity chefs Mario Batali, Wolfgang Puck, and Gary Danko. From 2019 to 2022, Rockerman served as the executive sous chef at Florie’s in the Four Seasons Resort Palm Beach, which is owned by Michelin Star chef Mauro Colagreco and is his only restaurant in the U.S. From 2014 to 2019, he was a sous chef at Casa Tua, an award-winning Italian restaurant in Miami.

 

Chefs Armusik and Rockerman bring fresh flavors to 3800 Ocean, offering guests a modern American dining experience. Start the feast with mouthwatering Sauteed Shrimp Bruschetta drizzled with a spicy Calabrian chile paste. The Coconut Conch Chowder is the perfect hot starter, served with saffron-coconut milk. 3800 Ocean’s new Truffle Burrata & Prosciutto Salad sits on a bed of fresh arugula with hints of aged balsamic vinegar. Take to the sea with the Guava-Glazed Grilled Mahi Mahi served with a coconut red curry sauce. The new menu’s pièce de résistance is the Veal Osso Buco & Pappardelle. This pappardelle dish is served with roasted root vegetables, Romano cheese, and a savory veal reduction sauce.
