Santos Guisados Tacos & Beer Brings Mexican Guisados With a Modern Flair to Downtown Las Vegas

Celebrate the grand opening with $1 tacos and beers all day January 30

Your taco prayers have been answered as Santos Guisados Tacos & Beer will make its debut and introduce traditional Mexican guisados tacos and Mexican craft beers to downtown Las Vegas on Wednesday, January 30.  Santos will celebrate its grand opening by offering guests $1 tacos and $1 draft beers all day.

Owned and conceptualized by Las Vegas hospitality industry veteran, Eduardo Cordova, Santos Guisados Tacos & Beer pays homage to the home-cooked meals he enjoyed growing up in Mexico. Guisados, meaning “slow-cooked,” are typically served on a plate with rice and beans but at Santos will be served in a taco format featuring handmade tortillas

“I’ve wanted to open a taco shop in downtown Las Vegas for a long time,” said Cordova. “I am grateful for the opportunity to finally introduce this new concept to the city and share with everyone some of the dishes that made my childhood. While there’s no shortage of delicious Mexican food in Las Vegas, I’m excited to introduce something a little different.”

Santos’ signature guisados tacos will include Cochinita Pibil made with marinated pork slow-cooked in banana leaves and topped with pickled red onions,  Shrimp Fantasma featuring seared shrimp in a ghost pepper cream topped with corn, red cabbage and crema, Fish Chicharron with crispy fried fish topped with red cabbage and a mango-habanero sauce and the vegetarian Garbanzo Enchilada composed of chickpeas simmered in tomatoes, onions, herbs and spices, and topped with cotija cheese. Popular taqueria favorites will also be on offer including carne asada, al pastor, pollo asado, and crispy potato tacos, as well as quesadillas, nachos, carne asada fries, house-made guacamole, and chips and salsa. Guisados tacos and classic tacos are normally priced individually at $3-$4.50, the entire menu is gluten-free, and all vegetarian dishes can be made vegan by request.

Drawing its design inspiration from Mexican churches and cathedrals, Santos, translating to “saints” in Spanish, plays off of the Mexican culture, belief of and superstition in, saints and angels that watch and guide us. Throughout the intimate space, various saint and angel décor will watch over guests as they dine and imbibe with one of the Mexican craft beers from the dark wooden bar. At Santos, the old world meets the glamour of fabulous Las Vegas with playful celebrity-studded saint candles and a featured “Saint of the Day” prominently showcased near the bar. The interior is highlighted by exposed white brick, metal finishes and pops of color found in bright floral patterns as well as the glow of lights illuminated from an entire wall covered in candles. The 40-seat dining room also features a mural by local artist, José “Killz” Lopez, of praying hands holding a taco and adorned with Santos’ slogan, “Pray for Tacos.”

Santos Guisados Tacos & Beer is located at 616 E. Carson Avenue and is open from 11 a.m. to 8 p.m. Sunday through Thursday and from 11 a.m. to 11 p.m. on Friday and Saturday.
