Serves 4
Ingredients:

  • 1 lb. Onion, sliced thin
  • 4 Tbsp. Olive Oil
  • 1 lb. Mushrooms, sliced
  • Salt and fresh ground pepper
  • 1 lb. Ground beef
  • 4 Hamburger Buns, slider size
  • 4 oz. Société Roquefort

Method:

  1. Heat 2 tablespoons of olive oil in a large sauté pan over medium high heat. Cook onions until evenly browned and caramelized stirring frequently. Season to taste with salt and fresh ground pepper.
  2. Heat remaining 2 tablespoons of olive oil in a large sauté pan over medium high heat. Cook mushrooms until evenly browned and caramelized stirring frequently. Season to taste with fresh ground pepper.
  3. Form ground beef into 4 ¼ pound patties. Season with salt and fresh ground pepper and cook over medium high heat until desired doneness.
  4. Assemble sliders with mushrooms on bottom half of bun, then burger patty, onions and top with crumbled Roquefort.

Société Roquefort and Prosciutto Flatbread with Caramelized Shallots
Serves 4
Ingredients:

  • 1 lbs. Shallots, peeled
  • ¼ Cup Olive Oil
  • 2 Tbsp. Balsamic Vinegar
  • 1 16 oz. Frozen Pizza Dough
  • 2 Tbsp. Olive Oil
  • Salt and Fresh ground pepper
  • 8 oz. Prosciutto, sliced, torn
  • 8 large Figs, quartered
  • 8 oz. Société Roquefort, crumbled
  • 1 Tsp. Oregano, torn

Method:

  1. Preheat oven to 400 F
  2. Place shallots, 2 tablespoons oil, balsamic vinegar, and pinch of salt and pepper in aluminum foil. Fold foil closed to form package. Bake in a 400 F oven for about 20 minutes, shaking package frequently to prevent sticking.
  3. Thaw pizza crust and stretch dough into to flatbread according to directions on package.
  4. Brush dough with remaining olive oil, season with salt and pepper and bake on pre-heated baking stone until gold brown and crispy, about 12 to 15 minutes.
  5. Remove from oven and garnish with prosciutto, figs, Roquefort, shallots and oregano. Serve immediately
